Notes: First Brewed 07/2012
Whisky cask aged with raisins soaked in rum. Warm, chocolatey and boozy with refreshing resinous bitterness and a lingering toasty biscuit background from the malt. Toasted oak comes courtesy of the barrels and spicy, sweet, dark fruit flavours from the rum soaked raisins. Soak oak chips in rum, then steep in the beer for the rum cash finish.

Once primary fermentation is complete, rack to secondary. Sanitize a cutting board and knife and peel, seed, and chop one English cucmber reserving 60 grams (any remainder can be added to a salad of your choosing). Wash and trim 15 grams of Genovese basil. Rough chop 3 grams of Juniper berry. Add these ingredients to a hop sock that has been santized through boiling. Tie off hop sock and add to the secondary.
Condition in secondary for 2 weeks. Bottle or keg, and enjoy! |

| Notes: Very nice but turned out a touch too sweet, more hops please (3 IBU).. Simplify the spices, just use cloves, orange and cinnamon. Think mulled wine smell. It took 8 weeks to taste good, don't even try it in the first month. |

Consider using wyeast 1450 instead as Denny fav 50 tends to accentuate the malt character and mouthfeel. Also reported to have lower attenuation and produces very little esters, even when fermented warm, though I will aim to ferment colder.

Drinking notes:
WLP 036, it NEEDS to be lagered for at least 1 month, and do not stir up the gunk at the bottom of the keg/bottle. It's bitter, and weird tasting. A good combination would be gelatin and then a 1 month lager for extremely clear beer. Also, it is slightly too sweet and "sticky" for an oktoberfest beer. Adjust the grain bill to drop FG to something closer to 1.015 and use a LARGE starter to get this beer to ferment extremely clean. A better yeast would be a kolsch yeast, as it tastes cleaner. |
