Process Planning Notes:
During last ~20 min of mash, start the bochet in the boil kettle; if the mash goes a little long, that's fine. Rehydrate the bochet directly with first runnings when it's reached the correct color. Reserve 1 gal of first runnings, and reduce down to syrup separately from main boil, adding back into the boil kettle once sufficiently reduced.

Premium Light American Lager Holy Light was brewed in the tradition of some of the great American lagers. It was brewed with a slightly undermodified Moravian Pilsner Malt, as well as corn and rice to help lighten the body and lend a crisp and refreshing finish. Knockout at 45° F (7° C), oxygenate and pitch, let free rise to 50° F (10° C), and hold at that temperature for fermentation. Once 8 points from final gravity, let free rise to 60° F (16° C) for a diacetyl rest and hold for 7 days. Slowly cool, no more than 5° F (2.8° C) per day, to 32° F (0° C), hold for 2 days once temp is reached, then keg.

Recommended to bring mash pH down to 4.0-4.3 (https://beerandbrewing.com/become-a-kettle-sour-expert/).
Steep grains for 20 minutes at 155. Bring temp to 170 and add in all of the DME. Heat for 15 minutes and then cool down to 120. Add 3 oz. of Omega OYL-605 Lactobacillus. I kept the last 1 oz in the fridge in case I needed it later. Maintain a temperature of 92 (+/- 2 degrees) (http://www.milkthefunk.com/wiki/Lactobacillus). Using a FermWrap FE650 for heating and an InkBird ITC-308 for controlling the temp.
After 72 hours, start the 30-min boil.
At day 3 of fermentation, I sanitized and cut up 6 lbs. of Loquat fruit. Discarded the pits. I put the fruit in 2 grain bags. I didn't use grain bags with my last sour and the amount of sediment was an issue on bottling day. I made sure to give the fermenter a little shake each day so that air wasn't trapped amongst the fruit. I've read that not doing so can cause some mold to start to grow.
2 days before kegging, I took out the fruit and squeezed as much liquid from them as I could. Kegged on day 30.
I'm happy with how this came out. I may have preferred closer to 8 - 10 lbs. of fruit, but loquats are a pain to de-seed. Tasted like a good sour with some fruit. Not like the new, over-juiced beers that are coming out. |

Notes: Friday 9th September 2016 - 1.8L yeast starter put on stir plate
Sunday 11th September - Mashed in 64C. Raised temp after 45 mins slowly to 75C. Total mash time 75 mins. Final mash pH = 5.37 (adjusted with 1.5mL 80% lactic acid). Sparged with approx 3L 50C water to rinse the bag. Preboil SG = 1.051.
OG = 1.052. pH = 5.28.
Yeast pitched at 22C and temp controlled fridge set to 20C. Signs of fermentation less than 10 hours later.
Thurs 22nd Sept 2016 - CO2 transfer to DH keg with 60g Nelson / 56g El Dorado / 50g Simcoe. Approx 9g/L. FG = 1.010. 5.5% ABV.
Sunday 25th Sept 2016 - Started to crash the DH keg in the keezer.
Monday 26th Sept 2016 - Keg to keg transfer from DH to serving keg.

Turns out recipe really wants to end up with 5.5gal in fermenter. The limeaid brings it to 6gal. Take away .5gal from initial ferment.

Notes: Mashed at 67 degrees Celcius, 2/3rds added at first with all salt and 1ml lactic acid. After 30 min the remaining 1/3rds water without salts but 1ml lactic acid was added with temperature to get mash up to 67 degree again. Had just lost 1-2 degrees since insulated with blankets. Mashed in total for about 80 minutes. No sparge.
First wort hopping with all the 60min hops. Forgot to use irish moss in boil. Added yeast nutrient as wort was cooling in water bath, two different pots so cooling went fast. Hops strained away to fermenter but lots of trub went into fermenter. Measured 1.062 OG @30 degrees C, temperature corrected and water added for OG 1.056.
Fermented until primary almost complete gravity at 1.012, at 16 degree Celcius, green beer was then at 18 degree Celcius. Then fermented for a week at 21 degrees Celcius, reaching 1.010.
Dryhopped in bag for 3 days. Hops removed, 1/2 tsp gelatin in hot water added, and cold crashed at 0-5 Degrees celcius for a week. To be dry hopped again before bottling. |
