Notes: Recirculate mash for 10 min. First wort hops added just before lautering begins. continue thru boil. Wort 1.068; at 60min 1.078. Aroma hops added at flame out. For whirlpool hops, add at 120 degrees and let stand for 20 minutes. Dry hops: split into 2 portions, 3 bags each. Total 6 bags. Add 1st set after 2 days of fermentation, remove. 2 days later, add 2nd set, remove. 2 days later add 3rd set. Rack 3 more times to clairfy. Keg day 7.

Ferment with S23 or US-05 - meant to be lagered, but 05 can work as an ale.
Lagering Instructions:
At flameout, whirlpool, chill to 60°F and rack to your fermenter.
Pitch yeast and ferment at 48-52 degrees Fahrenheit for 3-4 weeks, then allow it to slowly ramp up to 60 degrees before cold crashing to 32-38 degrees.
Let rest for 14 days at 32-38 degrees before bottling or kegging. The longer you lager, the smoother the flavor will be.
The Quick & Dirty Ale Method:
At flameout, whirlpool and chill to 68 degrees Fahrenheit, ferment at 68 degrees for 14 days, then bottle or keg. Once carbonation is complete, refrigerate as long as possible before consuming. |

Notes: 4 quarts (4 ladles) for each decoction - decoct for 20 minutes - ensure water level and grain level almost even.
starter was made 48 hours before using 1:1 canned wort to water. Starter did not make a slurry, and needed to be scraped off the bottom. Would use a stir bar and a 24 hour starter next time with out going into the fridge.
pitched at 62F and cooled down to 50F
no protein rest for these highly-modified malts
very small amount of bubbling started about 5 hours after pitching yeast. this ramped up significantly over the next few days, reaching approximately 1-2 large bubbles a second. Bubbling only began to slow down on the 6th day of fermentation. |
