Notes: Version 10
Last batch was good, but on the bitter side. Cutting the 15 min magnum charge and rolling with new hops HRC003 - EXP-1302-333, El Dorado, and HBC 586.
Version 9 now.
Adding ascorbate to help ease oxidation issues with packaging per some information out there.
Taking away the whirlfloc.
Making some adjustments from version 7 due to availability of the malts and hops. Version 7 ended up being the best one I have made yet.
Will be trying a bunch of yeast through this series. Cosmic Punch is a good one if you have the right hops. Trying to clear out the samples I got at HBC 2022 Pittsburgh, so there's some whole cone stuff and lupulin pellets. Not sure if it's really going to go, but will find out with Verdant and K97 co-pitched.
Also bought some Oast House Strata Extract and will add that at kegging. Recommendation was for 0.5 mL for 5 gallons at kegging.
If you're wondering, the rye adds considerable body along with the spelt (wheat) and oats. It's pretty thick
Back on my BS again for round 6. This time throwing in what oats I had and emptying out the freezer leftover hops. |

Notes: This charity beer was a collaboration between Old Standby Brewing and Xicha Brewing in Salem, Oregon. Ingredients were donated by Yakima Valley Hops, Linc Malt, and Imperial Yeast and the proceeds benefitted 2 local charities.
15bbls were brewed at Xicha on February 9, 2022 and the beer was released on March 7, 2022 at Xicha Brewing on draft and in 16oz cans.
This is collab #1 out of 6 that Old Standby will be organizing in 2022 with proceeds benefitting various non-profit organizations.
Brewing notes:
40 minute extended boil time after flameout for whirlpool additions and rest before chilling and transfer to the fermenter. Pitch plenty of healthy yeast and raise the temp 2-3 degrees on the 3rd day of primary.

Notes: From u/brewmaester: It is a pretty simple recipe, but I’ve done several iterations over a few years to dial it in. I’m currently doing a full volume mash with a Brew Bag in my cooler mash tun. I mash at 150 degrees F for 45 minutes and boil for 30 minutes, then add whirlpool hops at flameout when I turn on my immersion chiller.
My recipe is for a 5 gallon batch, but I try to get around 6.5 gallons into the fermenter because the dry hops take on so much of the finished beer when I cold crash. On my set up it ends up around 7% ABV with 1318 or Imperial Juice yeast.
I’m not sure my exact water chemistry, as I recently moved and haven’t read my local water report for my tap water yet, but it seems relatively low in sulfate, and I add 1-1.5 tsp of CaCL per 5 gallons of water before I mash in.
I add dry hops when fermentation starts to slow down. London Ale III/1318/Juice yeast always produce a crazy aggressive fermentation from my experience, so I wait until airlock activity slows, usually around day 3-5 for me. I dry hop loose pellets and leave them for 5 days, then cold crash for around 2 days before I keg.
I’ve done several dry hop variations of this recipe and all have turned out great! Cheers |

Mashed at 145 - 146 instead of 147 as I entered the incorrect mash water volume in the strike water temperature calculation.
I bought Wyeast 3787 on brew day and made the starter right when the mash started.
I accidentally got double the Styrian Goldings instead of double the Saaz, so I added some Styrian Goldings at the 60 min mark.
Recipe calls for Belgian Vienna, but the homebrew store only had German.
I didn't use mroost 1400, but used Quirky Homebrew's Dingeman's Belgian chocolate malt, which I think is mroost 900.
OG was measured at 1.070. I added the extra drained wort from the strained grain bag to the fermentor (about three cups), as well as a 1L starter.
Fermented the beer for two days at 64 F ambient and five days at 68 F ambient. Beer was racked to serving keg, and 15 beers were bottled.
Next time use the Chimay water profile.
First Attempt
This beer is very good. After 3 - 4 weeks in the bottle, the banana flavors/smells have mellowed some, and a dark fruit character is starting to develop a little bit. |

| Notes: Very nice but turned out a touch too sweet, more hops please (3 IBU).. Simplify the spices, just use cloves, orange and cinnamon. Think mulled wine smell. It took 8 weeks to taste good, don't even try it in the first month. |
