Notes: In a separate pot, mix the adjunct with about 30% of its weight in pale malt. Add 4.87 qts 173 ° water until the temperature stabilizes at 155 °F . Hold this temperature for 15 or 20 minutes. After the 20-minute rest, begin slowly raising the temperature to a boil and boil it for 40 minutes.
While the cereal mash is at 155 °F mash in the remainder of the malt in a separate kettle and stabilize it at 122 °F for a protein rest.
When the cereal mash finishes boiling, stir it into the malt mash raising the temperature to 153 °F and let rest.

Differences are:
1) Mine was a BIAB.
2) No mash out; just mashed in at 156 Deg (grains dropped temp by about 3 deg.)
3) I didn't adjust the water profile (I used Deer Park Spring Water.)
4) I scaled it down to a batch size of 4.0 gallons.
5) Higher fermentation temp.

Notes: Shooting for about 6 gallons in boil. I haven't gotten my water mash/boil quantities dialed in...still kind of guessing.
Soak zest of 3 Grapefruits in vodka, in the freezer until secondary (all goes in).
Hibiscus flowers go in 1/2 gallon boiling water and steep 10 to 15 minutes. Strain and chill in sanitized container until ready to use.
Guessing on priming...will check temperature and volume, and adjust when ready. (And go on the low side, as per my usual issue with over-carbing.) |

Notes: Rye Wit Recipe from basic brewing radio. It is a low gravity beer just coming in at 2.1% ABV. James' recipe is for 4.5 gal,
scaled to 2.5
I am really excited about this beer. It turned out fantastic. For a 2% beer or compared to any percent beer it is dynamic.
It is extremely well balanced. The Dry hop used, Australian Summer, goes perfectly with the style. It has a clean palate with a spicy zing that fades quickly with a faint flower taste. I do not like a harsh and biting hop presence. It is not a hoppy beer, but would appeal to those who like the bittering character of an appropriately hopped beer. It is not thin or watery. The mouth feel is full and coating, presenting as a much bigger beer.
The next time I brew this I am going to experiment with another dry hop ( australian galaxy) just to see what difference would be.
