Boil 1 gallon of wort down to a quart then put it back in the boil kettle.
Fermented at 60* for 5 days and it was finished. Taste is amazing! Extremely complex for being so young! I will condition cold for 8 weeks then carb. Tastes of burnt caramel with a hint of smoke, and some dark fruit character. Huge malty backbone with a hint of hops for balance.
This extract version is just as good as the all grain version with a slightly nuttier and a bit less sweet flavor. Still an awesome wee heavy! |

Notes: 3 tsp Pumpkin pie spice @ 5 min of boil.
2 large cans of Pumpkin Puree to the primary.
For the bottling bring 3/4 cup of corn sugar and 1/4 cup of water to a boil with the following spices:
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. mace
1/4 tsp. cloves
Add 1/2 tsp of vanilla extract to the cooled priming mixture.
After the mixture has cooled, add it to the bottling bucket(before racking!)
Bottle and condition for 2 weeks. |

Notes: This is a quick kettle sour. It's ideal for anyone who doesn't want to risk "contaminating" their brewing equipment with bacteria.
Make up a lacto starter (*); I use Water Kiefer as the source.
Mash as normal and bring to the boil, then flameout immediately and allow to cool down 38 C. Pitch lacto starter and purge kettle headspace with CO2. Maintain temp. Sample every 12 hrs or so to monitor lacto progress. Once it's sour enough, bring the kettle back up to the boil and continue your brewing process as normal.
* Lactobacillus Starter Method
Combine the following ingredients to a liter of filtered water and boil for 15 minutes:
90 grams Dry Malt Extract
20 grams Dextrose (Glucose)
10 grams Calcium Carbonate (CaCO3 / chalk)
1 gram Yeast Nutrient or DAP (diammonium phosphate)
- Cool this starter solution down to around 38 C and add 100 ml of filtered water kefir.
- Seal the flask with a rubber stopper and airlock to prevent additional oxygen from entering the starter solution.
- Let it stand (covered) until pH reaches about 3.4 (5 days in my case), it will vary a lot depending on room temp.
- If you have a means of providing a temperature controlled environment, optimal growth is typically between 30 and 40 C. |

Notes: WLP007 - Dry English Ale yeast. Love this yeast for IPAs: it ferments clean, fast, and drops super clear, super quick. Fermented at 62F for 6 days, then raised the temp to 68F for 8 more days to help the yeast finish up.
Dry Hops:
Racked to secondary then:
4oz Amarillo/Citra/Centennial/CTZ (1oz each) for 5 days
3oz Amarillo/Citra/Simcoe (1oz each) Added day 5 for 4 more days
Rack to bottling bucket/keg on day 9 in the secondary.
The recipe for this beer started off as something close to Pliny, and evolved into the recipe above. I love using Amarillo, Simcoe, and Citra together, especially for dry hopping.
Tasting Notes: Aroma is heavy citrus and tropical fruit with lots of oily, resiny character. Taste is more of the same. A little malt sweetness up front, then boom: Hops. Finish is dry and bitter, but the bitterness isn't harsh and doesn't linger.

Notes: David Heath's Verdant IPA Recipe converted to my 16 Litre Induction BIAB Setup.
One major change I did was to add 10 IBU 60min Hops. I brewed several simmilar reciepes with mosaic and never found the early additions too harsh and liked the smooth bitterness and kettle hop aroma they added to the backbone.
Minor changes to the grain bill: Reduced Oats to 10%, Vienna to 12% (5% each). Added 1% sugar for 1point higher sg. |

Notes: Begynn med å varme opp 24 liter vann til ca. 70 grader i en stor kjele (bør være minst 30 liter). Sett boksene med flytende maltekstrakt i et bad med varmt vann (trenger ikke være glovarmt) ved siden av for å få maltekstrakten mer løselig og enklere å få ut av boksene. Når vannet i kjelen er varmet opp, rører du inn både den flytende og den tørkede maltekstrakten (DME/Spraymalt) til alt er oppløst i vannet og koker opp. La koke i 60 min og tilsett humle som beskrevet underveis.
Kjøl ned til 17 grader før pitching av gjær.
Gjæring på 18 grader til stormgjæring begynner å avta (typisk etter 3-5 dager). Øk deretter til 20 grader og hold resten av gjæringsperioden (totalt 14 dager). Tørrhumle etter 5 dager.

Notes: Make a starter with apple cider and water to get to 1.035. Added 1/4tsp Fermax Yeast Nutrient in the 1000ml starter. I waited until the yeast was completely finished fermenting the starter. I cold crashed, decanted the starter cider and pitch the yeast slurry.
Use fresh pressed cider from local orchard. Add 1 campden tablet per gallon of cider and wait 24 hours. StarSan the heck out of the rim of the jugs and caps so that they're clean once you're ready to pour into carboy.
Boil 2 quarts of water with brown sugar to dissolve and sterilize. Add to cold cider in carboy. Should stabilize the temperature just fine especially if taking the cider from a cold fridge.
Add 1tsp of Fermax to 4 gallons of cider/sugar blend. Pitch yeast and fermented in cool basement around 60 degrees air temp.
Keg and back sweeten with 2 cans of 100% grapefruit juice. |
