| Notes: An IPA with primarily Galaxy hops (citrus, peach, passion fruit), backed up by some El Dorado (tropical fruit, pear, watermelon, citrus). Simple light LME base, with 4% vienna malt steeped to add a touch more malt flavour to offset the hops. No crystal or caramel malt, to allow the hops to shine through. Almost all hopes added 10 minutes, whirplool or dry hopped. |

Notes: Fermentation and Conditioning
Use 18 grams of properly rehydrated dry yeast, 4 liquid yeast packages, or make an appropriate starter. Ferment at 68 ° F (20° C) to start, raising the temperature gradually to 70° F (21° C) for the last third of fermentation. When finished, carbonate the beer to approximately 1.5 to 2 volumes.
CaraMunich (60 °L)
All-Grain Option
Replace the English extract with 21.5 lbs. (9.75kg) British pale ale malt. Mash at 150 °F (66 °C). The mash volume for this beer, even at a thick 1 qt./lb. (2 L/kg), will be about 7.5 gallons (29 liters). If your brew system is unable to fit all of the base grain, feel free to replace up to half of the British pale ale malt with English pale ale extract. The flavor difference is minimal in such a big-flavored beer, especially with the high-quality extracts available today. Increase the pre-boil volume as needed to allow a 90-minute boil. |

Notes: Base Recipe based of Boulevard's Harvest Dance. Recipe came straight from Boulevard.
Aged in 30 gallon used Dark horse Rye Whiskey barrel that was previously used by McCoys for Ursa Major. Some whiskey aroma and stout aroma.
After a month in the barrel pellicle started forming. Aroma was fruity and barnyard. Started to feed dregs of brett and sour beers for the next 4 months.
Beer thinned out but Brett flavor and aroma dominates in a great way. Has some lacto tartness |

Notes: Yeast slurry 200ml from 2nd February (5 weeks old).
Make 700ml starter.
Brewed 14 March 2015. Strong sulphur smell first few days of fermentation.
Bottled 29 March.
First taste 4 weeks - nice light Saison with some of the Pilsner flavours coming through, slight pepper + spice, very light Lychee at the end. Great bead and fluffy head.
7 week tasting - this has developed into a true Saison for me - it is quite light in flavours but leaves you wanting more - all the flavours have melded beautifully. |

Notes: Quince cored and chunked to yield 3#. Simmered in 6 cups water 45 minutes, mashed and drained, then ran through food mill to get syrup out. Add this syrup at flameout and whirlpool.
US-05 dry then added mixed blend in 1 quart starter after it finally kicked off (24 hours into fermentation). |

Notes: Modified version of a Spotted Cow clone recipe. I'm not a big fan of the cream ale style so was looking for something established that I might actually enjoy drinking. Or someone will.
OG recipe here (unaltered notes below):
https://www.brewersfriend.com/homebrew/recipe/view/672/spotted-clown-new-glarus-spotted-cow-clone-
-----------
pitch 1600 ml starter at 68 degrees
Mash in the 152 to 154 range for a bit of body. You do not want the beer to thin.
I've made this brew 6 times. Last batch was Mar 6 2014. If you have ever tried this brew from wisconsin, (New Glarus) brewery this recipe comes close to what Spotted Cow is all about. They claim it is a Farmhouse Ale but do not use Saison yeast.
After extensive research this is what I came up with for a recipe. The are secretive about the yeast they use, but the consensus is, it is a Kolsch yeast either Wyeast 2565 or WLP 029 and I think it is 029. My preference is 2565. Wyeast 2565 is my house yeast.
Ferment at 58-60 degrees with Wyeast 2565 or 62-65 with WLP 029
I've had good compliments on this brew from others. I live on the Wisconsin border and they don't sell it in Illinois, for some reason they will not ship it to this state. Will update as needed but for now this recipe is a pretty solid clone.
I made 11 gals (2 batches) in march 2014 I cant keep it in the house fast enough. SWMBO and her friends love it. With the temps soaring in Chicago this is a great brew for summer. From kettle to glass is about 5 weeks so turnover is quick. Good luck if you try it, shouldn't be disappointed.
Made batch 7 (5 gal) on 6-14-14 and used Mt. Hood for flavoring (.5) and aroma (.5) I think the domestic hops are closer to the original flavor. -enjoy-
Made batch #8 2-28-2015 no changes should be ready to drink mid April
