Finalize water profile with Gypsum, Calcium Chloride, and Chalk, split between mash and boil, to take city water to desired water profile (Ca: 66; Mg: 30; Na: 48; S04: 56; Cl: 72; HCO3: 112). Mash at 152° F for 90 minutes. Raise mash to 168° F and sparge out. Fermentation: Start cool at about 50°F, and hold there for the first forty-eight hours. For every day thereafter, increase your temperature by 1°F for ten days. After it’s been in the fermentor for twelve days, it should be at a steady 60°F. Activity in the airlock should be low (but not absent). Raise to 65'F for diacetyl cleanup for 3 days. After fermentation is complete (estimate 3 weeks) cold-crash to begin the clearing process. Bottle conditioning: Raise the temperature after bottling back to room temperature to encourage appropriate bottle fermentation, then place it in a dark, cold corner for at least six weeks. Carb at 2.4 vols and let sit for another 4+ weeks to lager.

Temp was 74c. mashed in and hit 66c. So heat to 83c next time. used traditional therm with red handle. lost only .5c in mash. - Heated sparge water to 80 but after running in and mixing is was only 65c, so next time heat to 90c. - preboil gravity 1047, 5 points lower than last brew but I am using less grain and a litre more water, so makes sense. -Hit OG target spot on - 1056, and fermentor vol exactly, 27 litres (WOW). -sprinkled 05 on top and started ferm at 22c. No belt use and hopefully temp will get down to 16-18c. -damn 05. Took till day 7 before bubbling was down to 10 seconds and when I tested gravity it was 10 10. I dry hopped and moved to secondary and the beer does taste some white dry and bitter but hopefully the gravity won't drop much further - DH at day 4 and noticed day 5 that bad was floating. Sank it. - bottled. 2.2 co2, 26 litres, at 16c - 128 gr sugar. - FG 1008 (droped 2 pts in week of DH). ABV 6.3. A dissapointment as target FG was 1012.5. Tasting at bottling was good, bit dry and bitter.

Added 10 dashes of cinnamon to pumpkin with a gallon of water boiled and cooled before addition to primary. Adjusted OG 1082 FG at kegging .985 ABV... FUCKING 12.7 My most requested and quickest drank beer. Definitely brew again. Minimum 3 months age. ***July 12 2015*** OG: 1.055 possible miscalculation with OG... FG: 1.008 @ transfer to secondary ABV: 6.16%

THE GOLD LME WAS NOT AN OPTION ABOVE! THE GOLD LME OPTION WAS NOT AN OPTION ABOVE SO I PUT 9.15 lbs of Pilsen LME. When I tried to add GOLD LME it did not calculate correctly. Pilsen would work BUT GOLD LME IS THE CORRECT LME, NOT PILSEN! PLEASE UNDERSTAND THAT IF YOU USE PILSEN YOU WILL NOT HAVE THE SAME TASTE AS TWO HEARTED IPA! I APOLOGIZE BUT GOLD LME IS NOT AN OPTION ABOVE. PLEASE USE GOLD LME! A starter is advised! 2 stage fermentation is a must. Expect aggressive yeast activity within 48 hours. An airlock will NOT handle this. You will need a blow off! 1056 is a super active yeast. It will blow the top off of a bucket or blow up a carboy, no joke. US Safale 05 is a great dry yeast option if you don't have a blow off. Thank you and enjoy your beer my fellow HOP HEADS! Oh, feel free to use 2 ounces of Centennial hops, instead of one, when dry hopping. This would be dry hopping at 2nd fermentation. Also, depending on how hoppy you want it, you could put the hops in for the whole 10-14 days during the second fermentation, 1 or 2 ounces. Or, for less hoppiness, add 1 ounce a week into the second fermentation and just allow to dry hop for a week. The choice is yours. Just depends on what you want and how aromatic and hoppy you want the final beverage. Enjoy.
