Notes: The base recipe is from Morebeer's Pliny the Elder kit (malts and whole hops). **Note, I added more DME to this calculator to get actual ABV of around 9.45% OG: 1.085, FG: 1.013. Use 0.5 lbs DME, next time I might skip the maltodextrin, the beer tastes slightly sweet but balanced. I also pitched 2x yeast vials.
Oak chips were aged six months on about 5oz of Evan Williams on a full packet (12oz?) oak. This provided a nice smokey flavor and means that I didn't have to sanitize the wood chips. Added oak with dry hop pellets. I feel the oak significantly zapped the hops flavor, beer is balanced or tilting sweet almost. |

Notes: 4 liter starter. Decant the day of brewing and make a 1 Liter starter just to wake the yeast up and dump it all into the fermenter.
Let it sit on the yeast cake for about three weeks before cold crashing for 5 days with gelatin.
Transfer to secondary after the cold crash and add whiskey soaked barrel chips or #3 char oak spirals.
Give it a taste after a couple of weeks and if it's good proceed to bottling with a pinch of CBC yeast in each bottle. Do not try to add the yeast into the bottling bucket, it does not typically make it into the bottles when you do that. |

Notes: update 1/3/19 : i was just thinking it is a little light on hops and bitterness but it does fall in the middle of the range for english barleywine. looked up some barleywine recipes on aha and ibus on most are in the 30s. i think im going for english but i did like this american style recipe which used all cascadem its old foghorn from anchor :

to carbonate, you could :
a) primary 2-3 weeks, secondary 1-6 months (some people add champaigne yeast here), bottle condition 3-9 weeks (some people add champagne yeast here too)
b) primary 2-3 weeks, bottle with no additional yeast, age/condition for 6 months..

Notes: For those interested - this was a hacked Brewer's Best kit. I added the pound of Blackswaen Biscuit malt for the 8 oz in the kit.
Just kegged and made 12 bottles for curious locals. The Mangrove Jack M44 was a little elderly, about 6 weeks past its date...but it is supposed to be a chico strain - anyway, it didn't dry out as much as I hoped...finished at 1.010. After a week or two on gas, I'll give it a taste. I did get better attenuation than predicted above.
If this had been US05 - it would have dried out to the bone - down around 1.005 or lower. I had the M44 and needed to use it...
I'll have to use it again to confirm this is its' behavior - I fermented at 64 for 14 days and then crashed to 38 for a week. Clear, clean transfer to keg. Hope it tastes good when I sample it. |

Notes: Heat 3 gallons of water to 166 F. Mash-in grain, mash for 60 minutes at 154 F. Sparge with 3.5 gallons for pre-boil volume.
Collect wort and boil for 15 minutes. Chill to 95 F, purge kettle headspace with C02 and pitch the lactobacillus. Wrap the kettle in blanket and let the temp drop on its own. Sour until the pH drops to 3.3-3.7. After the desired pH is reached, bring the wort to a boil, add hops and boils for 15 mins.
Add hops for 15 mins
Chill wort to 75-90 F, pour into fermenter and pitch the yeast
My Sour Mashing variant:
Mash for 60 mins as above with 4.5 gallons of water, pitch Lactobacillus into mash, purge headspace and maintain temp between 113-120 until pH drops to 3.3-3.7.
Drain to boil pot, boil for 15 mins, add hops for 15 mins |
