Notes: theyre saying to do a large starter for my american pils i have planned. like a gallon starter. with all that wort to drain off, might as well hop that shit and bottle it up....amirite?
using amarillo and ekg instead of opening a new saaz pack.
what temp to ferment at? care most about yeast propagation but also want it to be drinkable....i have 11 days so if i ferment lower it might be done in time. but also where would i do this, is the garage appropriate temperature? |

Notes: After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 60°F (16°C) for one week, then allow temperature to free rise to 70°F (21°C). Upon completion of fermentation, add dry hops and wait 2–3 days. Crash the beer to 35°F (2°C), then bottle or keg and carbonate to approximately 2.5 volumes of CO2. |

Notes: Original author's notes: I designed this as an easy drinking hot weather beer. Just enough yeast character too peek through the hops. Very crisp and dry. I set out to brew something that would satisfy my need for hops and still be ultra quafable. This fit the bill. For those of us who love saisons and IPAs, this is the best of both worlds. |
