took the detre clone recipe and doubled it (all malt amounts, all hop amounts) with the following mods :
* subbed out belgian candi sugar for 2.5 lb honey
* subbed out wyeast belgian ardennes 3522 for wyeast trappist high gravity 3787
* added .75 lb acid malt for pH balance based on henrico county water (guestimate)
* changed yeast attenuation from default 76% to predicted 85%. it might end up being higher than that, usually is higher for highly fermentable beers with simple sugars. for the honey tripel it was in the 90s. (i am not completely sure i am using this attenuation knob correctly but basically after the brew is done I go back and adjust this percentage until the calculated FG matches the measured FG)
issues/concerns :
* how much yeast is needed. use yeast calculator to decide how many packs to buy and/or how big a starter to try to build
* even though the hops are doubled, i think the IBU is too low for a beer of this gravity. It might be ok for short turnaround for contest but if done right I think it deserves a higher IBU which will help it stay balanced as it ages.
* i could see the efficiency on this beer being bad. currently set to 55 but i wouldnt be surprised if it is 50 or even less if we do 100% all grain. should consider reducing the base malt and using some DME which is more reliable / predictable
** we could consider boiling extra long too. Last time we boiled all in one giant pot but if we boiled in separate pots we could probably boil off more volume and get a better higher OG
* aside from the question of "can our mash tuns fit 20-somethin lbs grain", we could consider just buying and splitting a 50lb sack of belgian pale malt - not sure if OG has that but they def have sacks of pilsner malt which would be similar (but have to boil at least 90 mins)

To brew this Dogfish Head Raison D’Etre clone, mash grains at 152°F (67°C) for 60 minutes. Mash out at 158°F (70° C) for 10 minutes. Sparge and bring to a boil, adding hops at specified intervals.
Halfway through boil, remove two cups of wort from kettle and soak raisins for 10-20 minutes. Puree in a blender and add back to kettle 10 minutes from the end of the boil, along with the candi sugar. Shut off the boil and add aromatic hops.
Chill to 70°F (21°C), aerate or oxygenate well and pitch ale yeast slurry. Ferment at 70-75°F (21-24°C) until fermentation is complete. |

Steep at 65-71C for 45 minutes in a grain bag then rinse thoroughly as you fill up the brew pot.
Don't use too much star anise spice.
Wait at least 2 months before drinking this bad boy (consider racking to secondary fermentation). You could even let it sit 6-12 months to ensure whatever bits of star anise that made it into the fermenter have mellowed out.
Instructions for making inverted sugar (scale as necessary):
1 lb sugar (better to use pure cane sugar - I used the brown variant)
1 tsp lemon juice
1.5 cups water
Place all ingredients in a pan
Bring to a boil
Boil for approximately 20 minutes
Original inspiration was from QUAD PISTOLES recipe below. I scaled and tweaked it a little to reduced the alcohol content, and to bring up the IBU a little (as usual!). I don't have access inverted sugar or liquid malt extract. I crushed whole star anise seeds instead of using powder.
Due to the homebrew shop limitation, I made the following swap:
Caramel/Crystal Malt - 80L --> Caramunich III
Biscuit Malt (23.0 SRM) --> Melanoidin Malt

Notes: added columbus with 45 minutes to go but then there's another 15 minutes of utilisation so I think the IBU will be a touch lower than indicated
decided I wanted flavour and aroma with Coconut and Vanilla so put in 45 mls of coconut liquid extract and 4 vanilla pods whole at 94C
added Zythos at 81C so maybe a tiny bit of utilisation but would be hardly anything
Smelled absolutely fantastic in the boil with the coconut - it smelled like reef oil |

Notes: Mild is a style on the brink of extinction in England, but its popularity is slowly growing with a subset of amateur brewers who desire a beer with lots of rich flavors and a low level of alcohol. The majority of the flavor and aroma in mild comes from the yeast and the malts. Mild has very little in the way of hop flavor or aroma, and hop bitterness should be just enough to balance the bulk of the malt sweetness. It is most often dark in color, from copper to very dark brown, but there are pale versions, too. The pale version focuses on the biscuity, toasty malt notes, while darker milds may have caramel, chocolate, coffee, licorice, raisin, and other flavors. I have even come across a mild in England with a firm tobacco note, which was actually a pleasant part of the overall beer. There is such a huge range of flavors in mild that it allows for a great deal of creativity. Being a low-gravity, low-alcohol beer, brewing a great example requires enough dextrins and other residual sugars to keep it from seeming thin. Using a relatively high percentage of specialty malts and a good base of English pale ale malt helps create a nice, broad malt backbone and plenty of malt character. Keep the hops simple, with just a bittering addition. Ferment with an English yeast that provides character but attenuates lower to help keep the beer from seeming thin. Also, serve it warmer and with restrained carbonation. The warmer serving temperature allows the character to come out, and the restrained carbonation prevents that harsh biting feel when a low-gravity beer has
too much carbon dioxide.
Use 5 grams of properly rehydrated dry yeast, 1 liquid yeast package, or make an appropriate starter. Ferment at 68° F (20° C). When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55° F (11 to 13° C). |
