Notes: A simple west coast IPA, with hop forward character with light malts and clean yeast strain. Going for a dry(er) finish with low mash temp that would partially be balanced by inclusion of dextrine and oat malts. Base malt is a neutral UK 2-row.
Also based on my current inventory of hops that I need to get rid of :) Feel free to adjust, especially dryhop quantity.

Notes: 1a) Get the sour wort pH down to 4.5, by adding phosphoric acid, but only after the mash is done.
1b) Boil for 15 mins, chill to 100F, & add 14 capsules (20B cells each) of probiotics. No hops to be added in this phase.
1c) Leave it aside, till it reaches 3.3 pH.
2a) Boil for 15 mins. Add the hops now.
2b) Pitch yeast & ferment as normal.

Notes: 5/10/15: Boil 1.5 qt water & 1 cup DME for 15 min.
Cool to 50 deg and pitch yeast (2 pkgs). Place in beer cooler at 50 deg overnight.
Bring 4 gal purified drinking water to 125 deg, steep grain for 30 min, bring temp to 155 steep 40 min. Bring to boil & add 1 oz Perle. Boil 40 min & add 1 oz Sterling. Boil 10 minutes & add 1 oz Sterling. Boil 10 minutes. Cool to <60 degrees and pitch yeast.
Put in keg cooler @ 50 degrees.
5/16/15: Removed from cooler to garage at 62 degrees for rest. |
