Fermentation:
You will get the best flavor results if you have the ability to raise the temperature slowly as the end of fermentation approaches. Start your fermentation at between 17°C. Keep the temperature on the cool side until the most lively part of the fermentation is complete.
As the fermentation begins to slow, let the temperature rise slowly over the last two or three days, and allow it finish out between 21-24°c. The early cool temperature will help control ester and phenol production while the temperature climb will help with attenuation and cleaning up DMS. |

Notes: (You can scale this recipe up or down to fit your needs, generally can cut the grain bill and hops in half with good results.)
Optional* for more "character" from the yeast use the White labs American Hefeweizen WLP320
This base beer great by itself but lends itself well to flavoring after fermentation.
Examples:
6 oz of Apple flavoring (1.5 bottles of Brewer's Best)
8 oz of Blueberry flavoring (2 bottles of Brewers best)
1 unsweetened packet of powdered lemonade for a shandy.
Experiment and enjoy!

Notes: This one is kind of light, in the style of most popular American beers. It's not my personal favourite, but good. Every one that are Bud fans realy like it.I think the honey and maple offsets the "cider" taste you usually get from using corn sugar. |

Notes: a Session beer... drink a lot
Well, that was the original plan. This beer failed to make it - that is what I get for shipping yeast from California to Georgia in the middle of summer. Smelled amazing and was shaping up to be everything I wanted. Although, at 4.8%, I don't think I would call it a Session Beer. The grain bill was designed to impart as much complexity and flavor into the beer as possible without having a huge alcohol content. |
