adjusting the IBU and BU/GU down. just finished with calypso which was around 50 IBU and 0.85 bu/gu and it was kinda too bitter. moving late addition hops from 15 minutes to 10. down to 43 IBU and .73 BU/GU

Notes: Mash grains at 154°F (68°C) for 60 minutes.
Batch sparge at 168°F (76°C).
Bring to a rolling boil for 60 minutes, add hops at specified intervals from end of boil.
Chill wort to 67°F (19°C) and pitch yeast.
After nine days, rack to secondary fermenter and dry hop.
Let rest another nine days at 68°F (20°C).
Keg at 2.5 volumes of CO2 or bottle condition with 4 oz (113 g) corn sugar.

| Notes: Loved this brew, brought it all over the region to friends who never had homebrew before, and they all loved it too. Baked it into a bread too - mmm! Great nutty flavor and awesome body, although it didn't clarify as well as I would've liked. |
