Notes: **1/2/2020- I stopped fermentation with 8g of a sorbate/sulfite mix from a wine kit and added 1qt of Pear Juice in to back sweeten. Then cold-crashed and kegged and after 4 months it is amazing! I bottled the whole keg in order to make room in the keezer, and also because it's not an everyday drinker.
12/19/2019- Made this with 1.75G of Apple Juice and 3G of Pear. Unfiltered, unpasteurized. Ascorbic Acid in juice, but shouldn't be a problem. It was poured onto a WL-007 Dry English Ale yeast cake. Fermentation started in about 1-2 hours. NOTE: The sugar is not really added to the recipe, the OG here was lower than my measurements. |

Notes: Inspired by guest Mike from Zebulon Astizan Ales on Experimental Brewing E95. NEIPA with 8 oz Chinook @ whirlpool and 8oz dry hop.

Single infusion mash at 153°F for 60 minutes. Adjust mash pH with phosphoric acid (target 5.3 pH). Lauter then boil for 55 minutes (cut 5 min short due to new stove/setup w/higher boil off rate). After flameout, chill to 195°F and add whirlpool hops (10 minute contact time) hop addition. Knockout. Pitch yeast starter along with. Ferment at 68°F. Add dry hop at high krausen (day 2/3). Rack to keg and force carbonate to 2.6 vol. (5.2 g/L) CO2.

Notes: Corn Malt: ≈ 1-2 days prior to brew day, slowly roast Blue Corn Malt in oven until nutty aromas develop. Let cool, then cover loosely until crushing.
Yeast options: WLP940, OYL-113
Serve with a lime slice.
May, 2023 - 16oz (16%) Blue Corn Malt @ 325° for 30 minutes. Added depth, mostly bread, cracker, biscuit. No roast flavors. ≈ 5 SRM. Fermented with Baja which left some bready/yeasty flavors but was otherwise ok.
Feb, 2024 - 24oz (24%) Blue Corn Malt @ 325° for 40 minutes. Not much difference from 2023 version taste and color wise. Used WY2112 which was a far better choice than Baja. Very clean, slight sulfur, more lager-like.
April, 2025 - 24oz (24%) Blue Corn Malt @ 350° for 45 minutes. Used WY2112 but smack pack was dead. Used BRY-97 as emergency substitute. Beer was clean, crushable and not much, if any, difference from 2112. Additional roasting time and warmer temperature again made little difference. |
