Hopped beyond the point at which IBUs are measurable, only the most hardened palate will get beyond Jack Hammer's intensely resinous pithy bitterness and to the grapefruit, orange zest and dry biscuity malt beyond. You could brew this with less hops, but really, why would you bother? Be aware that this is probably the hoppiest beer you will ever make. Make sure you use fresh hops, for a massive fresh grapefruit hit. Have everything else in your store cupboard, and buy your hops last, as close to brew day as possible!

Notes: This is a very simple cider with few additives to let the apple flavor shine through. With proper aging, it produces a dry, fruity cider.
- Add 1g/L Malic acid to lower pH by .1 as needed to reach 3.7 pH.
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching rehydrated yeast.
- Primary fermentation: 4-6 weeks @ 55°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks or until clear @ 60°- 65° (cellar temps)
- Keg condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg

1C. Premium American Lager
Lager Americana Premium Aroma: Aroma de malte de baixo a médio-baixo que, se presente, pode lembrar cereais, ser doce ou parecido com grãos. O aroma de lúpulo pode variar de muito baixo até médio-baixo, com notas florais ou de especiarias. Baixos níveis de características da levedura (maçã verde, DMS ou frutado) são opcionais, mas aceitáveis. Sem diacetil. Aparência: De coloração palha clara a dourada. Colarinho branco, bem espumante e que raramente persiste. Muito límpida. Sabor: Seco e com final bem definido (crisp) com baixos níveis de dulçor de cereais ou malte. O sabor de lúpulo varia de nenhum a leve. Amargor de lúpulo de baixo a médio. O equilíbrio pode variar de levemente maltosa até levemente amarga, mas é relativamente muito perto do centro. Notes: ferment for 7 to 10 days, cool condition for 3 to 4, make sure yeast has fallen to bottom before kegging
on this last batch I was out of San Diego and used Nottingham yeast, just a note alcohol went up and hope flavor went down, saving this yeast, goes strait to your head
notes on the batch: fermented for 7 days, pulled it into kegs for 7 more at 40 degrees, then pulled off with the auto-siphon into another keg then carbed at 20 for 2 days, not the hop burst of flavor I was hoping for but nice slight bitterness with lots of spunk |
