Notes: Inspired by guest Mike from Zebulon Astizan Ales on Experimental Brewing E95. NEIPA with 8 oz Chinook @ whirlpool and 8oz dry hop.

Single infusion mash at 153°F for 60 minutes. Adjust mash pH with phosphoric acid (target 5.3 pH). Lauter then boil for 55 minutes (cut 5 min short due to new stove/setup w/higher boil off rate). After flameout, chill to 195°F and add whirlpool hops (10 minute contact time) hop addition. Knockout. Pitch yeast starter along with. Ferment at 68°F. Add dry hop at high krausen (day 2/3). Rack to keg and force carbonate to 2.6 vol. (5.2 g/L) CO2.

Notes: Steep the crushed malts in 2.5 gallons (9.5 L) of water at 155° F (70° C) for 30 minutes. Remove the grains from the wort. Add the malt extracts and boil for 60 minutes. Add the first hop addition of Amarillo at the beginning of the boil primarily as a foam inhibitor. Add your irish moss for the last 30 minutes. Turn off your burner and remove your pot from your heat source. Now add your 5 ounces of Amarillo hops, and stir to mix in. After about 3 to 4 minutes, begin using your wort chiller to drop the temperature of the wort to pitching temperature. This addition is a bit tricky, but the goal is to have the large amount of hops in your beer for about 5 minutes after the beer has finished boiling, but prior to cooling below around 150. This extracts a small amount of hop bitterness, and a large amount of hop flavors. When you have cooled your beer to about 80, you can strain the beer into your fermenter. Aerate your beer and pitch your yeast. Ferment at 68°-70°F to help hold the aromatics in the beer. When fermentation is complete, rack your beer off the trub, and add the remaining “dry hop” addition of 3.0 oz. of Amarillo, and allow the beer to absorb the dry hop flavors for about 4 days. Then bottle or keg as you normally would. |

Notes: Brewhouse efficiency was actually higher than stated as the inverted sugar (golden syrup) was added after the boil, directly to the fermenter. I can't seem to account for that in the recipe builder.
The OG was lower than I had originally planned. I was aiming for 1.067. I think my normal 80% efficiency was hit slightly by the larger than average (for me at least) grain bill . I had initially envisaged a 23L batch but pitched a 2L starter at high krausen. This again lowered the OG somewhat as it diluted the wort with much lower gravity starter. This is also why I included 200g of DME in the recipe. This is actually from the starter, not the beer.
When checking the gravity after 7 days and before dry hopping, I was down to 1.008, so much better attenuation than is suggested for this yeast. |
