Notes: This strain is particularly well suited for retaining lager characteristics at ale temperatures while producing malty, brilliantly clear beers. I though this yeast would be perfect for this Baltic Porter.
Fermention was 10 days @ 60 Degrees. Secondary was 4 days @ 68. Kegged and kept Cold (42 degrees).

cold house, very slow ferment expected.
despite 5 oz of hops, only a light hop flavor expected due to very low sugar content. very subtle flavor in last batch that was like dry champagne.
brew started 5/4/2021.
expected ferment time > 2 wks because last batch got bottled prematurely at 2 wks. |

Notes: My son sent me a pic of this beer he enjoyed in Chicago. Asked if I could duplicate. BA has it at 91 which is pretty respectable. I'm going to give it a go to get it really close and impress the neighbors. this version is using extract and partial mash. I will work up an all grain once I get my 2-row in.
taken from the Revolution Brewing description of the beer:
Fist City, a crushable Chicago pale ale named after the Loretta Lynn tune. It is brewed with lots of 2 row and red wheat with a little specialty malt for a beautiful golden hue. A blend of Centennial, Citra, Chinook, Cascade and Crystal hops give the beer its flavor and aroma. This beer is meant to be a supremely drinkable brew for those who love hops. Magnificent California hop aromas play in perfect harmony with this brew’s extremely satisfying finish.
ABV: 5.5% IBU: 40 SRM unknown; this recipe is from one I found on the web and have no comments as to its closeness to the beer. My son is visiting for Christmas and will bring some home to compare with this batch I plan to brew. certainly a complex hops schedule. |

Notes: Originally used Willamette hops at both 15 and 5 minutes, but that had more of an English ale taste. Tasted great, but not right for style.
Tried Cascade at 15, but still tastes more English than American.
Now eliminating Willamette with Centennial at 15, Centennial and Cascade at 5.
Just because they were ready to use, added 1.2 oz fresh Cascade hops at 1 minute to most recent version; not reflected above.

Try to find Fawcett Crystal and Chocolate. Gordon Strong suggests this is the key to the recipe.
I could not track down Fawcett, so went with Hugh-Bairds Crystal and Chocolate.
Other hop options: Kent Goldings, Goldings, Fuggle. |
