Malt type and grape cultivar were not chosen based on any historical data, but on the author's taste. It's also a first attempt. Hops as a more affordable bittering agent was chosen over pure saffron for economical reasons.
The first attempt went down to 1.013 SG as opposed to the 1.026 Brewersfriend estimates. |

Using new burner/stand with HP regulator (2kg/hr)
Heated 46L water in kettle to strike temp 76°C. Took approx 20mins from 45°C.
Turn off burner, Remove kettle from burner.
Added all grain in double bag. (Next time calculate total volume in kettle including grain volume, add heated water when necessary once grain removed).
Mash grain with spoon.
Insulate with quilts. Mash temp start 72°C. 60mins.
Mash grain with spoon once at approx 30mins.
Temp 67°C at 0mins.
After removing grain bag, added approx 9L water, pressed grain bag to extract maximum infused liquid. Temp dropped to 58°C. Took 90mins to reach 100°C!
Start 60min boil, added hops as per schedule. A Hop ball started bobbing up, need extra washers or other method to keep near bottom of basket.
Added immersion cooler 10mins boil. Chilled wort from 100°C to 25°C in 20mins. (need to figure method to enable fitment of lid over piping and install cooler into kettle without hitting thermometer).
Transferred to fermentor with racking tube, 35L.
A lot of grain particles in solution, maybe from extra extraction with spoon?
Rehydrated 2 x yeast packs with 250ml water.
1052OG measured
Dry hopped 44g Cascade and 61g Mosaic day 10.
FG1008 day 13. Cold crashed @ 2°C for 5 days.
Kegged 2 x kegs day 17.

Notes: Easy to make, comes out clean and has a smooth body, somewhat dry
NOTES:
For yeast, I use 1 packet of Wyeast Cider Yeast 4766
Indian Summer Apple Cider is the preferred apple cider if using store bought. (Uses Vitamin C)
DIRECTIONS:
Add remaining apple cider to fermenter along with sugar. Oxygenate cider and add yeast packet. Stir together and cap.
Stir cider on second day to degass. Check gravity after 4 days, stir again to degass. Once stable, transfer to secondary, and let sit for an additional 2 weeks. Should be clear. After two weeks, add hops and dryhop for 7 days.
Cold crash for 24 hours, add to bottling bucket with dextrose priming sugar. Use priming calculator for exact amount.

Notes: This started as an attempt to clone North Coast Brewers' Old Rasputin but I added a little twist... 3 lbs of Africanized "Killer" Bee Honey (hence the name). It turned out excellent and even garnered an honorable mention in a local homebrew contest. It's a very dark and very malty much like Old Rasputin but the Killer Bee honey (which by itself tastes a lot like caramel) added a smoothness I have never tasted in a beer before. |
