Notes: - based on "Westbound Quad" recipe on the HBA website/zymurgy magazine. That called for 1.1kg dark candi sugar @ 180L. I'll use 180 if I can find it, otherwise I'll mix/match dark and light to try and hit about 20 SRM.

update 2019-10-17: first attempt at this ended up looking like a tripel because the candi sugar was not as dark as advertised (60°L rather than 275). Fixed by making a reduction of Special B and Chocolate malt (recipe updated).

After 5 days of bottle conditioning I stuck one in the fridge overnight. It already has plenty of carbonation with a nice thick 2 finger foamy head. Banana's and cloves are obvious on the nose and mouth. It still is pretty "green" tasting so I think another week of conditioning will help that.Very close to Hoegaarden in taste. This is my first liquid yeast try.
I'll definitely drop the extra 11 oz. of DME next time. I don't want the ABV that high. |

Notes: Steep malts and oats for 45 min @ 155 degrees in 3 gallons of water. Remove grains from wort, sparge with .5 gallon of hot water and bring to boil.

Pitch yeast and allow to ferment for 7 days.
Add 2 pounds of blackberry puree Let ferment/flavor for an additional 7 days. Rack to another carboy to separate the berry solids. |
