Notes: Conduct a mash at 150° F (66° C) for 60 minutes. Boil for 60 minutes, following the listed ingredient additions. Ferment at 72° F (22° C) for 10 days.Toast coconut until very dark, but not burnt. Add to secondary in a bag for easy removal. As you will be adding to secondary, take necessary sanitation steps when introducing the coconut. Let beer sit on coconut for 2 days. Transfer and carbonate. |

Notes: WLP 645 Brettanomyces Claussenii and White Labs French Saison pitched together. Brett C is fruity with no barnyard or poop smells. Adds great complexity and prolongs the longevity of the packaged beer. All my Saison are getting Brett C in the primary or added to the secondary split batch. 5 gallons split into two 3 gallon carboys. One getting brett C the other not. Usually always end up liking the Brett version better.

Transfered to corny keg on 7/18/2017, Finishing Gravity 1.003!

Notes: Mash at 149-150 for 60 minutes in order to maximize fermentability and conversion.
Sparge at 170F.
Do not add the candi syrup at the boil. Instead, add 1 lb. 24 hours after pitching, and the final 1 lb. 48 hours after pitching. This will insure that the yeast is not overloaded and will reduce "hot" alcohol flavors.
