Notes: Brewed beer on 1/30/2021.
I used around 2 big teaspoons of 88% lactic acid to get pH to 5.2 for the mash.
Starting Gravity (SG) = 10.1 brix = 1.0404 g/L
% extraction = 40.4 * 7 gals = (282.8/354.5)*100 = 79.8 % extraction
OG = 12.4 brix = 1.0501 g/L
Hydrometer = 1.050 g/L
FG = 1.010 g/L via hydrometer on 2/13/2021
Cooled wort to 55 degrees with JaDed brewing custom wort chiller. Yielded about 5.7 gallons in kettle and 4.8 gallons in carboy.
Direct pitched Fermentis K-97 (German Ale Yeast)
Did not put in fermentation chamber because house temp is around 64 degrees F at all times.
After 1 day of fermentation, temp got up to 70 degrees F in the fermenter so I put in the ferm chamber and dropped temp to 60 degrees F for 9 days then ramped to 70 for 1 day fot D-rest. Then gradually dropped temp to 45 degrees F for 3 days.

Notes: This is made with some ingredients that have passed expiration. Hop pellets are 1 year old. Grains are about 3 years old. Cocoa nibs have sitting in freezer for about a year.
Start on: 3/21/20
let pure pitch yeast warm to RT.
Steep grains and cocoa nibs 30min at 160F, sparge w/170F water.
Add water, gypsum and kosher salt. Add DME and bring to boil. Add cardemom, 2oz cascade. After 30' add 1oz hallertau. After 50' add 1oz cascade. After 60' of boiling turn off heat, chill.
Adjust carboy vol w/tap water. Aerate and check brix. Add yeast. aerate, ferment.
Brix = 14.8. OG ~1.061
3/22= Wort must have been to warm, because yeast is very slow to show signs of life. Add ~1/2 wy1056 today (~28hr after 1st pitch). Luckily Alison was brewing today.
3/31= Tfer to 2nd. Tastes a bit like ESB. I didn't think the small amount of nibs and cardemom would be very detectible.
Brix= ~9.8 (blurry), 1.025 grav, and 4.69% ABV.
4/2 = Brix=8.5, 1.017 FG, 5.76% ABV.
Bottle with 1/2c corn sugar.
bronze caps marked "Q"
4/9 = carbonated and tasty after 7 days. Very slight chocolate aroma. A bit hazy, but that may improve with time.

Notes: MASH INFO:
Single infusion/Batch Sparge/Full Body
Mash in with 14.38 quarts of water at 174. Should equalize to 156 degrees. Mash at 156 for 60 minutes.
Batch Sparge twice with 2.5 gallons of water at 175 degrees.
Boil for 60 minutes using the hop schedule listed in the ingredients section.
Add 10 oz Nibs to primary after fermentation has ended, do not rack beer to a secondary. Just add the nibs to the primary fermentor. 2-3 days before adding them, soak the nibs in just enough Vodka to cover the nibs. Then dump them in, vodka and all, let sit on the nibs for 7-10 days max, 3 to 4 days seems about right. Add Milk Sugar if preferred. |
