Notes: Goal is to have 7 gallons 1.072 SG wort at start of boil.
Add Dry Malt Extract (DME) if SG is low, or may want to wiat until the beer is in the fermenter. If you wait to add DME, be sure to add it after fermentation begins to calm down.
If water is soft, hold off on adding roasted grains and British Crystal Malts until 15min of mash
Added 16oz of Lactose Sugar, needs to be whirlpooled. Can be done 15 min prior to flame out. Will need to be whirlpooled with no rumbling boil. OR we can do it at flame out. See page 55 bottom of 2nd paragraph. I prefer to try the first option.
Vanilla beans to be cut into 1 inch segments and soak in Angel's Envy Bourbon until ready to add to secondary. |

Ca 50 - 100 ppm, SO4 100 - 200 ppm, Cl 20 ppm
This gets pretty close with a slightly higher chloride.
This is to be a Northwest coast ipa, dryer and with a sweet pine.
Not using camden or irish moss to try to achieve a slight wheat beer look.
This recipe is meant to be derivative of pliney the elder, however i'm not nervous on the current clone recipes recommendations on hot side hop additions and vague water chemistry. Current clone recipes appear to be super bitter.
1.5q per lb of grain mash thickness
equals 20qts or 5 gallons in the mash.
Sparge with 3 gallons.
.125gallons X 13.79lbs = 1.72 gallons during the boil. This should net roughly 5 gallons after a one hr boil. |

C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |
