Notes: Cold Steep 100g crystal malt & 50g chocolate malt overnight.
Brew day Sat 29th October.
Mashed 4.5kg of 50/50 Vienna/Pilsner malt.Used 100g saaz hops for 40 IBU’s.
Split wort into two to create two 19l brews by adding 750g rice syrup to each fermenter.
Addition of cold steep grains to give colour and a touch of chocolate flavour.
OG 1.037 ferment 12-14 days at 12C
The beer has come out a darker golden colour to the Asahi recipe which has light straw appearance.
Both beers taste great bit need to mature. |

| Notes: Mash crushed grains in a small stockpot in about 3 litres of water for 45 minutes. Strain wort through a colander or strainer into your brew kettle, then rinse grains with about 1.5 litres of water at 65 C. Add 5.5 litres of water and start to heat. Bring wort to a boil and boil for 60 minutes. Add hops according to schedule above. Five minutes before the end of the boil, stir in the liquid malt extract. Transfer wort to a clean, sanitized fermenter and top up with clean water to make 20 litres. Aerate, pitch yeast, and ferment at 20 C. Dry hop with Amarillo hops in the secondary fermenter. |

Notes: Bring 9 quarts of water to 169 degrees, in a large pot. If you have room, add the grain bag(s) with the grain to this pot. If not, you can use a cooler/bottling bucket/whatever. Stir well, to thoroughly wet the grains and make sure it's between 152-158 degrees. Cover, insulate with a blanket or something and let sit for an hour. After an hour, drain the liquid from the grains. You should have about 1.5 gallons of liquid. Pour hot water over the grain bags, up to your boil volume. Ideally, you'd have room for 2 more gallons or so. Stir well, and drain again. Add that to the liquid you already have and bring that to a boil.
Once boiling add the hops as in the original recipe.
At 10 minutes left in the boil, take off the heat and add a can of Alexanders pale malt extract (4 pounds liquid) and stir well. Or you can add 3 pounds light dry extract. Both will work. Stir well, bring back to a boil, and boil 5 minutes. Take off the heat and cool. Top up to 5 gallons. |
