In keeping with the fun feel of Lagunitas, most of the brewery’s beers feature a little story on the
label. Half the pleasure of these beers is trying to figure out what it all means! This India pale ale
sports deep gold in the glass with a creamy beige foam cap. The nose takes in a pleasing blend of
floral hops coupled with citrus. This light- to medium-bodied IPA shows a well-balanced palate that
is not too bitter, consisting of citrusy hops and malt. The finish echoes the aroma and flavor, a
pleasing combination of hops and malt. Lagunitas IPA is a most worthy West Coast IPA. |

Notes: Take two on the "Balmain Brown", after the the first one turned out more of a porter (now dubbed the "Balmain Brown Porter") due to a mistake on the brown malt Lovibond value.
Brew Notes:
- 0715 Start, 0745 mash in (esky pre-heat with hot tap water, 75C strike temp, 65C mash), 0900 lauter and sparge (63C on lauter, batch sparge 85-90C strike to ~70C, remix grain bed, 5x 500mL recirculation on all runnings)
- pre-boil 24L @ 1.060; ~64% efficiency, 1000 heat on (2 x 15L pots, one hopped, one boil only), 1035 first hop addition, 1135 flame out
- Cooling in esky via 2x cold tap water bath, 1x ice water bath (accidentally added ice to water from 2nd bath, so ice melted too quickly and slowed down cooling, ~1210 pitch (1L beer/slurry mix US-04 harvested from 1500 Lashes Pale Ale bottled 2 days prior, 2tsp sugar added ~60mins prior to pitch)

Mix 3.9kg of WW Apple Juice concentrate with 21.1L water to make up to 25L volume.
Add yeast when liquid is at pitching temp.
Allow to ferment out to 1.010.
Add 40 grams of Black Doris Plum Cider Powder.
Transfer to keg and chill to prevent any further fermentation.
Our Apple Cider is made from the highest quality apples, usually 3 types being Braeburn, Royal Gala and Jazz, depending on the season. The result is a very clean and crisp cider. The apple flavours are light and pleasant and the overall taste is refreshing. We suggest to ferment to 1.010 SG and put the cooling on to stop fermentation as this will leave some residual sweetness without making the beverage too sweet. At this SG the alcohol will be 3.85%. If you want to hit 5% at this final SG, add an extra 600 grams of dextrose at the start. If you let the yeast ferment all the way the final gravity will be about 1.006 which is an alcohol content of 4.38%. If you want to hit 5% at this final SG, add an extra 350 grams of dextrose. |
