From Craft Beer & Brewing Magazine, Aug-Sep 2020
This homebrew-size recipe is based on the fast-selling triple IPA from Reuben’s Brews. Emphasize yeast health with a big starter, generously dry hop, then give it enough time to cold condition.
Batch size: 5.5 gallons (21 liters)
Brewhouse efficiency: 75%
OG: 1.092
FG: 1.016
IBUs: 50 ABV: 10%
Adjust your water profile to ensure a mash pH of 5.3 and a chloride-to-sulfate ratio of 3:1. Mash the grains at 148°F (64°C) for 60 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge the grains and top up as necessary to obtain 6 gallons (22.7 liters) of wort—or more, depending on your evaporation rate. Boil for 60 minutes, adding the corn sugar and hops according to the schedule. Whirlpool for 10 minutes.
After the boil, chill the wort to about 67°F (19°C). Aerate the wort and pitch a big, healthy yeast starter. Ferment at 69°F (21°C). After primary fermentation is complete, add the dry hops for three days. Ensure a full diacetyl rest in case of refermentation—if possible, test for VDK levels (see “Hunting for Diacetyl,” beerandbrewing.com). Crash to 38°F (3°C) or lower for at least a week, then package and carbonate. |

Notes: Mash, Boil, cool wort then in a separate pot boil a small amount of wort and add the coco powder. The coco is partly hydrophobic so you need to boil it to get it mixed properly, watch out for boil over because the coco makes a foamy mess. Dont boil for longer than necessary for coco to mix into solution, longer will result in bitter taste. Add the coco mixture to the cooled wort.
Vanilla beans may be a substitute for extract, take care to note that the bean has much more flavor than the extract.
ferm at 60F, rest at 70 after 4 weeks for about a week. Drop to lager temp to get coco and haze out. Not all coco will fall out.
Ive brewed this a few times and its on par with the flavor of a New Belgian Ben and Jerry's Chocolate Chip cookie dough with a little more mouth feel and much darker color.
Cheers! |

Notes: I add 5 gallons to the kettle and heat to 155-160. Then add the grain bag and stir in the grain as it is poured to lower the mash temp to 152 for 60 minutes.
At the end of the mash, heat to 170 degrees and cut the heat. Pour 1 gallon of strike water to 170 degrees over the grain bag once draining has slowed. (I begin to boil the wort while the bag drains to save time)
Add 6 diced Jalapeño at 10 minutes left in the boil. (Remove seeds for just flavor...leave seeds for more spice) |

Tasting Notes: A slightly sweet take on a clean american wheat. Slightly like a Guava/Mango Quaffer
Decided to brew a wheat for spring and to play with mosaic, but it did not last that long.
Hard to describe, but tastes like a sweeter passion fruit/guava american hefeweizen that has been a hit with everyone that has tried it. Defiantly more of a hop forward beer (but not bitter hoppy), the wheat comes through but just hints at it.
Took it to a brew share a few weeks ago, the brew shop owners wife that doesn't drink malted beverages (cider lover) tried some and had me brew them a 5 gallon batch. So it has it's appeals!
4lb - Great western 2-row
4lb - Great western wheat malt
1lb - Gambrinus honey malt
-----
Mash : 152* 60 Minutes
-----
.25oz Mosaic @ FWH (60 minute boil)
.75oz Mosaic @15
1oz Mosaic @0 (steep for 10 minutes to let everything settle)
-----
Ferment with S-05 @65* for 2 weeks
Kegged and hit it with 10PSI for another week and started enjoying it. Gets better with time, but it's highly drinkable very quickly.
First time posting a recipe. Apologies if i forgot something.
:EDIT: IBU says 5, which isn't true, that is the SRM, the IBU is 25 |

Notes: Work stoppped draining, had to stir to get going again, I let the water level drop below the grain level and this created air pockets that stopped the drain of the wort
