boosting up abv a little from last year. not sure which system i will brew this on but probably the old one. maybe boost abv a little more since efficiency is bad? or reduce efficiency back down to 60 which is what the previous brew was.
was playing with water chem but issues with alkalinity....not sure if its the software or what. maybe just run it on tap...
time crunch this will be more of an american rendition subbing lutra in for what normally is chico for american wheat beer.

brewed last night. forgot to add the water agents smh. original recipe had me at 75% efficiency for 1050 OG, came out with 60% for 1040 smh. idk why i thought i would get 75, maybe because recently ive gotten higher efficiencies with double crushing the grain, but also this beer has a lot of flaked wheat and oats so i shouldve known it would be low.
Really if I had done my rule of thumb and left out the flaked stuff in the calculation i wouldve gotten to 75% on the rest of the grain bill.

revamping last years OFFSZN for rebrew as mommys bier 2.
* adding water profile and brewing salts. using shared ward labs profile for henrico county for september 2020.
* reducing nugget bittering addition from 0.5 for 60 to 0.4 for 45 to fall more in the middle of the accepted IBU range for this style
* reducing 2row from 4.5 to 4.5lb to account for good efficiency last time, knock the beer abv down from 5.89 to 5.3 (also more in the accepted range)
* added acidulated malt for mash pH
.....should i scale this up to 10 gallons though???? might not have space in the fermentation chamber....

Originally was supposed to hit 1049 on 5.5gal with 75%. Came out a little under vol, but 1055. Updated recipe as such.
I thought I was going to come out way under because of how light the wort was. And it's a small grain bill compared to recent recipes.

notes / changes from original aha receipe :
* swapped out yeast for wyeast.
* this is 5.5 gallons. since its even grain and hop values just leave it like that and aim for 5.5
* the spices are supposed to go in at flameout for only 5 mins in whirlpool - prob need to use a bag.
* recipe calls for 90 min boil but i dont think that is necessary. * ferment at 63 for 7 days then free rise to 73 for remainder.

"Bring about 1 quart filtered water to a boil, then pour over spices and cover in a separate container. Let steep for 15 minutes, then strain to remove spices. Cover tea and keep chilled until used. I blended in about 2 cups (473 milliliters) of this liquid in the 5-gallon (19-liter) batch. But you want to do it slowly, mix it well, and taste it. Different people have different tastes, so you’re looking for a nice balance without being overpowering with the spices. Don’t use tea—it has too much tannin."

Notes: Place 3 gallons of cool water in brewpot and bring to 150 F. Put steeping grains in bag and steep for 1 hour.
Lift bag out, let drain and discard.
Bring water to boil, remove from heat and stir in 3 lbs of DME. Return to heat.
Bring to boil and watch for messy boil over. Once risk has subsided, add 60 min hops and start timer.
At 20 minutes, add whirfloc (or irish moss) and 20 minute hops.
At 5 minutes, add remaining DME (using same procedure as above).
At 1 minute, add last 0.50 oz of hops.
Add 1 gallon of cool water to primary.
Chill, transfer to primary, add cool water to bring to 5.5 gallons, pitch re-hydrated yeast. |
