Notes: Roast 8oz Chopped Pecans at 275F for 15 minutes. Place in paper bag for a few days (I did overnight since I didn't think in advance)
Soak 4 oz chopped pecans in vodka - just enough to cover pecans. Use this tincture at kegging/bottling time.
Mash grains and Roasted Pecans for 60 minutes.
Boil 60 mins
1/2 oz Mt Hood hops @ 60 mins
1/2 oz Mt Hood hops @ 30 mins
8oz Maple syrup at flameout

Notes: This pale ale, nearly blonde ale was specially made for Kinsleigh's first birthday party.
The yeast used was 1 packet (11g) of Nottingham High Performance Ale Yeast. Also added was a wash consisting of roughly half a liter of Nottingham High Performance Ale Yeast, taken from an earlier Strong Ale called "Ye Olde American Hogwash." (OG 1.092 - Final ABV 9.8%).
The Fermentation was maintained at 20.0 celsius with an inkbird temperature controller and a space heater. |

Notes: - Mash à 152 F pendant 60 min avec ajout de l'acid lactique
- Recirculation + pasteuriser à 176 F
- Refroidir à 40 C
- Ajout de pro biotique/ lactobaccilus ( capsule 20 billiard 1 capsule pour 5 L, donc 5 capsules pour 25 L )
- Laisser reposer 48 heures environ
- M'assurer d'avoir une tourie bien pleine pour éviter l'infection
- Faire mon boil après 48 heures comme à l'habitude
- Ajout de baies de sureau au boil
- Ajout de levure brett ou levure neutre bien simple comme Us-05
- Ajout de 1 L d'extrait de sureau en secondaire 7 jours en secondaire
- Ajout de framboise et de mûres 7 jours en secondaire
- Ajout de houblon à 3 jours avant de coldcrash
