Notes: start at 65 F, free rise to 70+, slowly boost to 80F when fermentation slows/peaks. Going to try fermenting with a sanitized foil airlock and adding candi sugar (or honey - if I can find something interesting) during primary. Need this to get to a fairly low gravity since it will be bottled. Thinking 3 volumes of CO2 in some fairly sturdy bottles.
Considering adding ~ 250mL of a WLP644 starter I'm growing up for a 100% Brett IPA (this should add additional tropical aromas/flavors and maybe some funk).
This batch will be split after primary - 2.5 gallons will be dry hopped (half all dry hop amounts) and 2.5 gallons will be racked onto tart Wisconsin cherries with some sour bottle dregs (Jolly Pumpkin, Mobcraft Existence, ??). I also plan on brewing a couple 1 gallon batches for blending.
Starter: .75L (4-5 pellets simcoe) on stir plate (5/6).

Single decoction for mash out:
When mash hits 156F, pull 8-10 quarts mash, boil x 15 min, return to mash tun at mash out. Total mash time ~90 min.
75 min boil
Hops loose in kettle
Chill at end of boil
Ferment at 52F. After 7 days, slowly raise temp over 7 days to 65F.
Once fermentation is complete, cold crash x 7-10 days. Gelatin fine x 3-5 days. Keg and lager for 4-5 weeks as close to 32F as possible.

Notes:
Mash the crushed grains and flaked oats in 1.5 gallons of water at 150F. Strain the grains and rinse with 1 gallon of water at 170F. Mix in malt extracts and Belgian candi sugar. Add water if needed. (Calculated boil volume: 7 gallons)
Bring wort to a boil. Add hops as scheduled and pomegranate if desired. Whirlpool, chill, and transfer to a clean, sanitized fermenter. If needed, mix in enough clean, sanitized water to make five gallons. Pitch yeast at 70F and ferment at 65-70F for seven days, then transfer to secondary for ten. Bottle or keg as you would normally.
