Notes: Steep crushed grain in 2.5 litres of water at 65.5c for 30mins
Drain the grain water into a large pot. Rinse the grains with 2.5 litres of water (also 65.5c) and add tis water to the pot.
Bring to boil
Take pot away from the heat and add the dry and liquid malt extract and maltodextrin, stir thoroughly.
Top up the pot with cold water to 24.5 litres and bring back to boil
Once boiling add hops following the schedule.
At completion of the boil cool rapidly.
Aerate wort and pitch yeast. |

Notes: Night before:
Collect and treat 7.5 gallons of RO water.
Brew day:
Mash at 154°F for 60 min,
Mash out at 176°F for 10 min,
Boil for 60 min with schedule additions as indicated.
Chill to 170°F for 20 min whirlpool
Chill to pitch temp (65°F) and pitch yeast
Ferment at 68°F
~ Day 2/3: (At 5 SG points from FG)
Add dry hop, increase temperature (70°F) and apply 15psi pressure until fermentation is complete.
Cold crash, close transfer, finish carbonation, serve.

Notes: This is a modern take on a Kvass (but since no BJCP style for that, and the fact that this bread has salt in it, listing it here as a Gose). Kvass would traditionally use old rye bread in the mash; I'm instead using three packages of Falu Råg-Rut Rye Crispbread (from Sweden) that is past its best-by date. Each package is 235g, so for three that would be about 705g total wt, but carbohydrates listed as about 60g per 100g serving, so 420g carbs is about 15 oz... entered in the recipe above as raw rye (for lack of better substitute). Planned recipe like that, but actually got much better efficiency (would’ve been 92%!) with those numbers, so by making it 25 oz - or approx full weight of bread, it calculates out to a more normal 80% efficiency... but also made it more of an Imperial Kvass or Gose!). Also, says 1.2g salt per 100g serving, so entered that in the water chem section as 8.4 g NaCl.
Add bread to entire mash volume of boiling water to cover (to gelatinize starches), mix up to break it down, and let it sit until it drops to mash strike temp, then add milled grain to hit mash temp. Then mash (no sparge) and boil normally from there. Use rice hulls if normal lauter... was very viscous! I BIAB, so normally don’t use rice hulls, but had an absorption rate of 0.15 gal/lb, vs my normal rate of 0.06-0.075.
It would traditionally be spontaneously fermented, and get just a slight sourness... so I'm using Philly Sour Lachancea (ferments and sours), and adding some crystal malt to offset sourness with some residual sweetness (could mash higher, too). Could also kettle sour, or even just use normal sacc yeast and add some lactic acid or lemon juice. |

| Notes: Brewed 11/4/16. Strike was about 170F and I hit 155F. Cooled with 2 cups of water and about 1gal of re-circulation.This brought it down to 151F after about 10min. Sparge went pretty well and I collected about 8.75gal(probably a little less), and cut it at about 2brix. The boil off of the first gal of wort went well. I believe I got about 3 cups form the gallon. Brew kettle efficiency was 76% but that was without the gallon of first runnings. I think I collected about 5.75gal but it might have been slighlty shy but it's above the sticker. Overall the brewhouse efficiency was good which probably was form the extra sparge and maybe the higher mash pH. Pitching temp stabilized at about 64F. 11/5/16 temp drifted up to 67F over the day and was cooled by to 64F by evening time. 11/6/16 beer was sitting at about 69F by morning (little high but probably fine) so cooled it down and by evening it was at about 65F. 11/7/16 the fermentation has slowed down substantially (e.g. no more krausen) and temp is sitting at about 67F. Biofined and gravity sample on 11/28/16. |
