Notes: A step infusion mash is employed to mash the grains. Add 11 quarts (10.5 L) of 140°F (60°C) water to the crushed grain, stir, stabilize, and hold the temperature at 132°F (53°C) for 30 minutes. Add 5.5 quarts (5.2 L) of boiling water, add heat to bring temperature up to 155°F (68°C), and hold for about 30 minutes. Raise temperature to 167°F (75°C), lauter, and sparge with 3.5 gallons (13.5 L) of 170°F (77°C) water; Collect about 6 gallons (23 L) of runoff. Add 60-minute hops and bring to a full and vigorous boil.
The total boil time will be 60 minutes. When 10 minutes remain, add the 10-minute hops and Irish moss. After a total wort boil of 60 minutes, turn off the heat and place the pot (with cover on) in a running cold-water bath for 30 minutes. Continue to chill in the immersion or use other methods to chill your wort. Strain and sparge the wort into a sanitized fermenter. Bring the total volume to 6 gallons (23 L) with additional cold water if necessary. Aerate the wort very well.
Pitch the yeast when temperature of wort is about 70°F (21°C). Ferment at about 70°F (21°C) for about one week or until fermentation shows signs of calm and stopping. Rack from your primary to secondary and add the hop pellets for dry hopping. If you have the capability, “cellar” the beer at about 55°F (12.5°C) for about one week

Notes: -Don't trust bitterness ratios for IPA's. They're all over the place. Seems like most agree that anything over 100 ibu's is pretty bitter. Shoot 70-90 for sweeter.
-Shoot high attenuation?
-For high alcohol brews, add sugar for easily fermentable yeast food.
-Higher mash temp= higher FG since more non-fermentable sugars added. Lower mash = lower FG.

Det sterke juleølet norske bryggerier begynte å brygge en stund etter 2. verdenskrig. På mange måter likt mørkt bokkøl.
Aroma: Svak til middels humleduft, og et svakt preg av fruktighet. Maltrik aroma.
Farge/utseende: Juleøl kan variere i farge fra kobber til mørk brun.
Smak: Det tradisjonelle juleølet er undergjæret med en utpreget maltsmak og middels bitterhet, liten humlesmak.
Kropp: Middels til stor fylde.
Eksempler: Borg Juleøl, CB Juleøl, Hansa Juleøl, Mack Juleøl, Ringnes Juleøl (polutgaven av alle).
3B. BOCK

Bock er et søtt og fyldig øl, som er helt dominert av malt.
Aroma: Middels til meget kraftig maltaroma, med karakter av brødskorpe og kjeks. Stort sett fraværende humlearoma. Fra fraværende til svakt nivå av fruktester og alkohol, som kan gi karakter av tørket frukt. DMS og diacetyl skal ikke forekomme.
Farge/Utseende: Kobberfarget til rødbrun. Klar.
Smak: Middels til kraftig, søt og maltet smak, med tydelige innslag av alkohol. Sødmen balanseres av humlebitterhet, men uten humlesmak. Svakt nivå av fruktestere.
Kropp: Medium til fyldig kropp.
Eksempler: Borg Bokkøl, Frydenlund Bokkøl, Mack Bokøl, Aass Bokkøl, Einbecker Ur-Bock Dunkel, Kulmbacher Mönchshof Bockbier.

I hjemmebryggersammenheng er forskellen på stout og porter at stouten er preget av ristet bygg og hardt ristet karakter mens porteren er rundere og mykere. I kommersiell sammenheng er grensen ofte mer flytende.
Aroma: Middels til kraftig maltaroma, som kan ha karakter av toffee, karamell, sjokolade og lakris. Svak til middels nivå av fruktestere, som kan ha karakter av tørket frukt. Fraværende til svak duft av engelske humletyper. Diacetyl skal ikke forekomme.
Farge/Utseende: Brun til mørkebrun, med kraftig skum som er kremfarget til lys brun. Klar til lett tåkete.
Smak: Middels til kraftig maltsmak som kan ha karakter av toffee, karamell, sjokolade, kaffe, ristet brød og lakris. Humlesmaken skal være fraværende til svak, og bitterheten skal være svak til middels.
Kropp: Medium til kraftig kropp. Svak til medium karbonering.

Notes: This is a great beer for the holidays. What screams Thanksgiving or Christmas more than pumpkin pie? Make sure you use plenty of rice hulls or you will have a stuck sparge. You can toast 2 row for 15 minutes at 350 to make your own toasted malt and cooking the pumpkin for 30 minutes can develop more caramel flavors. After the boil this beer had a great pumpkin flavor and the aroma from the spices were incredible. |
