Mesking på 66 grader i 60 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.
Kjøl ned til 17 grader før pitching av gjær.

Notes: Bring 2/3rd gal water to boil; remove from heat
Let water cool to ~165F
Stir in honey
Cool to ~75F
Pour into carboy, aerate
Top off water if needed
Pitch yeast
Cut lemon in half, squeeze both halves into the carboy - don't worry about the seeds, they'll be fine
Install airlock
This was my first mead ever and I likely made a lot of mistakes!
However, I bottled it after 5 months in primary and it seemed reasonably good! It was a little cloudy so I am now conditioning it and will update this at another time. |

Notes: This is Hapless Ginger Brew´s recipe. I´ve scaled it for a 10 liter batch to test it out.
230 G of Demerara sugar caramelised with a dash of lemon juice & 500ml of the wort, then added at 15mins. (Flame out and leave before adding - stir well and flame on for remaining boil)
All dark grains added at mash out - 77deg - 20mins

Notes: This always comes out fantastic, as good or better than the commercial version and a big hit with your non-hoppy drinkers. While I love my hoppy beers, this is a nice change of pace and especially delicious in the spring and summer. I've only used the US-05 yeast, works great, although I have never brewed it during the hottest part of the summer. Since I don't have fermenter temp control, I brew this in the spring and early summer in SoCal when the temp in the house is ~70 degrees or less, preferably in the 60s. |
