Notes: Add all salts at beginning of protein rest. Add lactic acid (2mL) at beginning of sacc rest. Boil for 15 minutes without hop additions to sterilize wort. Add lactic acid to wort to reach a pH of 4.7. Chill wort to 110 deg F. and pitch L. plantarum in kettle. Allow 24 - 48 hours for wort to sour, targeting a pH of 3.2. Follow the above boil schedule. Knockout at 65 deg F. and pitch WLP029.
We used a 50% pilsner and 50% white wheat for a balanced profile. We used Hallertau Mittelfruh because it is a low alpha acid noble hop. We used L. Plantarum to kettle sour the wort, this is a new and unique strain of bacteria for the both of us and we were curious about it. We used WLP029 as our yeast because it lends itself to the traditional flavor profile we were after.

Notes: On brew day, soak 4 oz of cacao nibs in whiskey (just covered) Ferment at 64 degrees for 4-5 days or until activity begins to slow. Add dry hops and cacao tincure. Continue to ferment for 7 days, then transfer to keg and age for 1 week before carbonating. |

Notes: Pretty good.. Stone fruit heavy, good mouthfeel. Consider adding a bit more pale chocolate to up the coffee/chocolate flavor a bit. .25 pale chocolate used. Recipe also used 1/2 golden promise 1/2 2 row rather than marris otter. Next time consider using 1/3 golden promise 2/3 marris otter for more bready backbone. Also add 1 more oz of black patent.
