| Notes: Combine all ingredients, mix, and aerate thoroughly with a kitchen mixer or immersion blender. Creating about 1 quart more than 5 gallons of must will allow you to completely fill your secondary 5-gallon carboy while leaving behind all of the lees. Stir vigorously with each addition to de-gas the mead. Transfer to secondary when fermentation has completed (21–28 days, may be slightly longer for 1056 yeast). Age 6–12 months. If the mead has not cleared completely, you can fine with Sparkolloid per manufacturer’s instructions. One more racking will help minimize sediment in your finished bottles. Bottle only after all signs of fermentation activity have ceased. |

For extract use 1 pounds of Munich LME
Mash grains at a ratio of 1qt/lb at 158 Fº for 60 minutes. Lauter, dissolve DME and bring to a boil.
Proceed with a 90 minute boil adding hops as per the schedule above.
Chill wort in the fermenter to 68F and pitch both vials of yeast. The fermentation will be violent so a blow-off tube is recommended. Ferment until the gravity stops dropping and is within 5 points of 1.020. If fermentation stalls halfway through, shake the fermenter to rouse the yeast or pitch a fresh vial of yeast.
Once fermentation is complete, rack to a secondary fermenter for 4-6 weeks before bottling. When priming, 1 cup of corn sugar or DME should suffice. The long aging time of Barleywines means less priming sugar is required as the yeast will have more time to convert any unfermented sugars. Once your Barleywine is bottled and sealed to your satisfaction, put them somewhere cool and dark and leave them for at least 6 months. After this aging, try and taste one every few months to see how the flavor changes with extended aging. |

Cream Ale Recipe
This is a very simple, inexpensive cream ale recipe that will get every BMC drinker in the room enjoying homebrew. So named because of the three different crops that go into the grist (Barley, Corn and Rice).
The grain bill is cheap and in this case, you can use Minute Rice instead of flaked rice. No step mashing required. Simply combine the ingredients and follow a simple single infusion mash at around 152 degrees. I also mashed this for 90 minutes to get a highly attenuated beer. FG was 1.005...leaving a very dry, crisp beer with no noticeable graininess.
This beer clears up quickest of any of my recipes. |
