Notes: Born on 9/23/18. Start 7:00 am - Finish 12:15 pm. Fast start to fermentation (within 6 hours). Lost almost 1 gallon in blow off container overnight. Next time use a 7 + gallon fermentation bucket. Took gravity reading on 9/27/18 - 1.020. Dry hopped with 1 oz. Citra & 1 oz. Amarillo on 10/2/18. Cold Crashed on 10/8/18. Kegged and began carbonation under refridgeration on 10/1718.

Notes: 2x Mangrove Jacks M31 Belgian Tripel yeast (possibly Westmalle yeast). Rehydrated at 34C.
Dextrose added 24 hours into fermentation.

3 Liters lost (1 to hop absorbtion and 2 to kettle dead space/cold break
Pitched at 18C. Risen to 21C at 20 hours with heavy blowoff activity. Fed with sugar. Upto 25C at 26 hours. Heavy blowoff activity. Ferment behavior sounds like Westmalle strain.
Saaz aroma oil at bottling.
9L dry hopped with Matcha Green tea (see Green Devil).
4L dry hopped with Hibiscus.
Reyeasted with GV1 at 3 vols. C02 (Hibiscus at 2.5 vols). |

Notes: Brewday March 5th. Left for Maui vacation on March 8th.
After returning from Maui trip, FG 1.016 on March 16. Wort tasted a little too malty and sweey for liking. Not enough hops.
The Kegerator door was open when I checked so I theorized temp got too hot and fermentation stalled. Closed door and left alone.
Checked fermentation on March 18th no change. March 19-20 no change.
Pitched 24 oz more sugar and a new packet of US-05 on Mar 21

Notes: On a sea voyage, Namibia is roughly half way to India.
The previous IPA to this one that I brewed was in the realms of a true old-style strength, 6.2% at racking so probably a little stronger by the time it reached the glass.
Namibia Pale Ale was an attempt to maintain the beautiful hop character but tone down the alcohol level so you could have more than one without falling off your chair. However something went wrong with the mashing/sparging process, probably too high a temperature, and the ABV at racking was only about 3.6%
That's probably only half the strength of the traditional true IPA, therefore it's about half way there, the same as Namibia :) |
