Notes: Combine 1 red chili pepper chopped(with seeds) and 2g ground black pepper with 8oz/250ml vodka on brew day and allow to steep. Strain liquid and add 1/2 @ dry hop. Sample prior to bottling and add more as desired to taste.
Target OG is 1.056(additional sugar from beets),Target FG is 1.014
Recipe adapted and simplified for homebrew scale from original by Lake of the Woods Brewing Company ON, Canada.
Cool to 18oC/64oF
Recipe calls for WLP-001(substituted BRY-97)
Let rise to 21oC/70oF
rack to secondary/dry hop(including pepper additions) at FG for 72 hours prior to cold crashing. |

Notes: Pitch at 48, aerate with pure oxygen. Ferment at 50. Add dry hops after 4 days of fermentation. After 7 days total, slowly raise temp to 60 for a 3 day diacetyl rest. Slowly lower temp to 34. Once at terminal gravity (about 14 days total) keg beer. Lager at 34 for about one month before serving.
Note: Imperial L13 Global is same strain as White Labs 830.

Notes: Trying safale-04 english ale yeast - yeast seems ok, little tart but not unpleasant.
Hops - I need to either not dry hop at all or try a mix of simcoe and centennial instead of chinook/simcoe. This combo seems a little overwhelming. Could possibly do only centennial too. Also, next time change the 1lb of flaked oats to .5 lb carapils
Still need to figure out hops.

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |
