Hinterland is a beer long in the creation, and even longer in the appreciation. On the aroma, deep reverberating roasty bitterness and sweet dark chocolate. Also in evidence, woodsmoke, rich vanilla, mocha and marzipan. When tasting, Hinterland reveals itself as the beer moves from cellar temperature to something warmer, yielding all of the above plus dried fruit, rich ganache and ending on a resoundingly warming finish redolent of chocolate liqueur or plum brandy. Towards the end of the fermentation allow the temperature to free rise. This will let the yeast finish off the fermentation and scour off-flavours from the beer.

Notes: This started as a basic Irish Stout kit from Midwest Supplies (Beer. Simply Beer.). The idea was to add some chocolate rye for a hint of spicy while imparting more color and roasty flavors. Addition of 1 lb of amber dme to boost abv a tad. All in all I wanted a strong flavored stout with some subtle pumpkin flavor that tasted a little like a big beer without actually being one.

My own gravity read was around 1.056. However this is a brand new hydrometer and also the first time I've taken gravity measurements (I'm really new to this) so I'm curious to see what my FG is. |

Notes: Pour 3 gallons of clean water into brew pot and begin to heat. Bring your water to a gentle, rolling boil.
Add the DME and corn sugar and Belgian Candi to the water and start timer when wort begins to boil.
Add Cascade hops with 45 minutes left in the boil.
Add Malto-Dextrine with 20 minutes left in the boil.
Add Fuggles hops with 15 minutes left in boil.
Add wort chiller to pot with 15 minutes left in the boil.
Add Irish Moss with 15 minutes left in the boil.

Notes: From Shorts, listed in the March 2014 Zymurgy had to change the eff to 60% to get the right numbers, was for 6 pounds each of wheat and pale, 1 oz fuggles at 60 and half oz at 30 and half oz steep, way it was in the magazine gave much to high OG and IBUs,

Need to adjust the Fuggles to IBU of 14
"Dry Hop" the orange and lemon zest 5 days before bottle while it is in the secondary,soak in sanitizer before you collect the zest |
