Notes: Souring Process-
1. Bring 2 gallons of spring water and dry malt up to 130 degrees and hold.
2. Dump mash into clean sanitized 5 gallon bucket
3. And in crushed Acidulated Malt and stir
4. Cover with foil the best you can to block air
5. Attach lid and wrap up in blankets on all sides to trap in heat while it sours.
6. Let sit for 15 to 24 hours to sour.
7. Open bucket remove foil and skim off any surface mold.
8. Smells like hell but it's suppose to!
9. Strain out all grains while adding mash to brew pot, add more water, and bring mash up to 155 degrees and add any specialty grains, or bring to a boil and finish recipe as directed. |

Steep the corn, 2-row, crystal 60L, and carapils with 1.5 qt/lb ratio of water for 30 min at 152F. Sparge with equivalent volume of 170F water. I
Make sure to calc your yeast viability, recommend a starter even with 2 yeast packs. Ferment at 50F until 80-90% attenuated and increase to 65F for diacetyl rest. Once FG is reached, gradually ramp down to 34F for lagering. Min 4 weeks lagering, but 6-8+ weeks is better. Fine with gelatin for 3 days before racking to secondary keg. Carbonate to 2.5+ vol CO2. |

Notes: This recipe requires Iso-alpha concentrate which can be purchased from http://www.the-home-brew-shop.co.uk/acatalog/Isomerised-Hop-Extract-57ml-Isomerized.html. I'm not sure of the correct amount to use as mines came measured, but I made my brew with an IBU of 30. Also. all the hops in this recipe are in hop teabags which are added to the end of fermentation. The teabags can be purchased from Amazon or Ebay. Here's the recipe:
Bring 3 liters of water to a boil. Add Candi sugar and dissolve. Add spices in a musin cloth and boil for 10 minutes. Add this concoction, including spice bag to fermentation bucket. Add liquid malt to bucket and stir until evenly distributed. Top up bucket of fermenter to 23 liters. Add liquid Iso-alpha concentrate to wort. Oxygenate the wort by stirring it vigorously creating a foamy layer on top of wort. Pitch yeast on top of wort. No need to rehydrate yeast, but feel free if you like. I used two packs (20g total) of Mangrove Jacks M41 Belgian Ale yeast. Allow to fermentate at 74F for at least two weeks. Once fermenation is done and stable, boil 500ml of water and add to a bowl. Add all hop tea bags and let seep for 10 minutes. Add this hop tea, including tea bags to wort. Allow this tea to seep in fermentor for 5 days before bottling. Batch prime wort using 6.5oz of dextrose and bottle. Allow to further fermentate in bottles for 3-6 weeks or longer. |

4 lb Pilsner malt

0.5 lb Rolled oats
0.5 lb Rice hulls (separate)
1.0 lb Acidulated malt (separate)
0.5 oz Northern Brewer (8% AAU) - 30 min
0.25 oz Sea salt - 10 min
0.25 oz Coriander, crushed - 10 min
Directions
Reserve 0.5 lb of fermentable grains and store in sanitized muslin bag. Mash in remaining grains (except acidulated malt) at 1.25 qt/lb for 60 minutes at 150F. After saccharification is complete, add 0.5-1.0 lb acidulated malt to target a mash pH of 4.5. Mash out at 168F. Sparge with 185F water. Collect 6 gal wort in sanitized kettle. Allow wort to freefall to 120F.
Place reserved grain bag in wort. Purge kettle of all oxygen by pushing CO2 through the wort. Attach ferm heater and maintain temperature between 110-120F for 24-72 hours. Check the wort pH every 12 hours to make sure you don't exceed your souring threshold.
When wort has achieved desired tartness (pH ~ 3.5), boil for 30 minutes, per the above boil schedule. Chill to 64F and pitch WY1007 starter (I used a Troublesome dreg starter in lieu of WY1007). Ferment in primary for 1 week at 64F and bottle or keg to medium-high carbonation (2.7 vols). |
