Notes: Belgian Candi Sugar is Demerara Sugar.
Steep grains UNDER 170F.
Preboil for 5 minutes before first hop addition.
Add yeast nutrient before pitching yeast.
First yeast should be a strong ale yeast. Aerate very well after pitching (aquarium pump for 1 hour).
After vigorous fermentation slows down (8-10 days), alternate between 1oz pure cane sugar and 1oz Demerara sugar additions every day for 5 days straight.
A few days after primary fermentation slows down, transfer into secondary carboy that has the Cascade hop addition and add the super high gravity yeast . Aerate very well (aquarium pump for 1 hour).
Continue to add sugar additions each day for the next 5 days (including this day you transfered). Secondary fermentation should last 1-3 weeks.
2 weeks after all fermentation activity subsides, beer is ready to package. Add champagne yeast at bottling. While transferring beer into bottling bucket, us a cup of beer to dissolve champagne yeast and add to bottling bucket with priming sugar in 1 cup water.
Beer ready to drinnk after 3 weeks. Age well, over a year. |

Notes: Late addition for candi sugar (approx 10 min left in boil). If using hard candi drop in slowly to allow for melting otherwise there will be a big chunk left in the bottom of the pot after cooling. The yeast will eat it either way during fermentation.

| Notes: Make a starter 24 hrs before brewing. London esb curdled like cottage cheese, it is not infected it is normal. Had a great fermentation. Please let me know if you brew this recipe. I would love each some feedback. Also I went higher than normal for grains cause I wanted a big beer. The brewing manager at fullers gave me these percentages. Thy were nice enough to respond to my inquiry. |

Notes: Start with 14.5 cups blackberries puree and strain to leave seeds behind.
Recipe only calls for Tettnang, but the Alpha % was lower on the bag I got and wasn't getting to the recipe's desired 12 IBU's so I decided to add a little leftover German Northern Brewer to bring them up a tad.
Ferment at 65-68 degrees.
Rack to keg or secondary and age for 4 months. (Test small sample monthly to see how sourness progresses. Longer aging will increase the sour flavors.) |

Batch Size (Gallons): 5.25
Original Gravity: 1.04
Final Gravity: 1.01
Boiling Time (Minutes): 60
IBU: 16.5
Color: Prickly Pear Red
Primary Fermentation (# of Days & Temp): 21 @ 68
Secondary Fermentation (# of Days & Temp): 7 @ 74
Tasting Notes: Has a noticeable taste of the prickly pear and finishes with a slight tartness.
4# of 2 Row
4# of Torrified Wheat
1oz of Hallertau @ 60 Minutes
Mashed @ 150 for 60 minutes
1.25# of cleaned Prickly Pear for secondary
To prepare the prickly pear I used tongs and burned off the thorns. I then skinned the fruit placed them in a bag and froze them. On racking day I pulled them out and allowed them to defrost a bit then puréed them in a blender. Finally I added the puree to secondary and racket on top of it.
I also believe using a little more fruit, using T-58 or using it in a blonde would all be good variations to try with this fruit.
