DIRECTIONS
Mill the grains and mash at 146°F (63°C) for 30 minutes; raise to 162°F (72°C) and rest 15 minutes; then raise to 170°F (77°C) for mash out. Recirculate for 20 minutes or until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 90 minutes, adding hops, nutrient, and Whirlfloc according to the schedule. After the boil, conduct a whirlpool step: Stir to create a vortex, add the whirlpool hops, and steep 5 minutes. Chill to 66°F (19°C), aerate the wort, and co-pitch the yeasts and Brett blend. For the “open” primary fermentation, don’t use an airlock; loosely cover the fermentor with a sanitized piece of foil. Allow the temperature to rise gradually during fermentation. When fermentation is complete and the gravity has stabilized, crash, package in kegs or champagne bottles, and carbonate to about 3.2 volumes of CO2.
BREWER’S NOTES
Conditioning: We age in foeders for 2–3 months; you could use oak chips or a small barrel. This recipe will work well with any Brett strain(s) you want to use. Condition in bottles for at least 8–12 months.
Water and pH adjustment: We start with reverse-osmosis (RO) water. At the first mash rest, we add phosphoric acid to target a pH of 5.2, plus 1.9 g gypsum and 1.3 g calcium chloride (equivalents for a 5-gallon batch). At the start of the boil, we again add 1.9 g gypsum and 1.3 calcium chloride.
This mixed-culture saison recipe comes courtesy of Bobby Kros, cofounder and head brewer at Kros Strain in La Vista, Nebraska.
Batch 625, he says, is “open-fermented in stainless with our house blend of two different Saccharomyces strains and five different Brettanomyces bruxellensis strains, then aged in an oak foeder. This saison has fruit-forward funk aromas and flavors followed by a dry but soft, finish.”
Here’s what our review panel said about the beer: “Hazy pale yellow with gorgeous, sturdy, meringue-like foam. Complex, enticing aroma with clove-and-chamomile spice, herbal-grassy notes, a touch of horse-blanket funk, and underlying stone fruit. Lively but soft on the palate, with bright stone-fruit flavors and fine, peppery bitterness that dissipates with the sparkle, leaving some cracker, herb-bitterness, and low-level barnyard. Elegant, tasty, and dry. Hits all the right notes.” The beer went on to become one of our Best 20 Beers in 2021. |

Using Wyeast 1318 instead of Whitelabs WLP067
Added 650 grams of acidulated malt to drop the PH to 5.2
Tweaked the water chemistry a little too - dropped the Baking Soda - 2:1 Calcium Chloride to Calcium Sulphate ratio
Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

**Yeast**
Foggy London Ale is the preferred yeast. If not that, then any good NEIPA yeast. Prepare yeast starter according to calculator @ Pro Brewer .75 (Ale)
**Grist**
Total 7.64 Kg grist with 1.6g flaked oats/wheat, (a shade over 20% of total). Just 50g of acid malt, dropped from 100g after JUICY 20.
**Mash**
Mash steps (41L = 9L spring/32L RO)
* bring 41L in HLT to 167F.
* Dough in 20L for [strike = 152F]
* continue heating remaining 21L
* Use HERMS to maintain 152 for an hour (first runnings should be around 1.065
* Raise temp to 158F and hold for 15 minutes
* bring to 170F (or close to it) with HERMS
* Sparge using remaining 21L of kettle water
* proceed to boil as soon as kettle starts to fill
* fill kettle to 31L; top up any remaining runoff to maintain that level
* Boil one hour. Add boil hops with ten minutes to go.
* Let wort cool to 190F add hop-stand hops and insulate as best you can, let stand for a half hour
**Hops**
Any floral lemony hops work; the original recipe used Citra & Mosaic.
Amarillo boil (10 minute boil for 43 IBU, per BF recipe)
Citra Mosaic whirlpool (60g each) and dry hops (45g each)
Amarillo boil 10 minutes
Citra Mosaic hop stand @ 190F 30 minutes
Citra Mosaic dry hop for ~4 days (maybe up to 7).
Add dry hops as soon as strong fermentation shows signs of tapering off.
**Fermentation**
Fill FF to 26.5L. Take yeast starter into account. For example, if your yeast starter is 3.5L, fill FF to 23L and then add the yeast starter for a total of 26.5L. |

DIRECTIONS

Mash in at 110°F (43°C), rest 10 minutes; raise to 122°F (50°C), rest 15 minutes; raise to 140°F (60°C), rest 15 minutes; raise to 150°F (66°C), rest 20 minutes; then raise to 168°F (76°C) and mash out. (Alternatively, you can do a single-infusion mash at 150°F/66°C for 45 minutes.) Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.5 gallons (25 liters) of wort, depending on your evaporation rate. Boil for 90 minutes, adding hops according to the schedule. After the boil, do a whirlpool step: Stir for 5 minutes to create a vortex, then add hops and steep 15 minutes. Chill to 55°F (13°C), aerate well, and pitch plenty of healthy yeast. Ferment at 57°F (14°C) for 1 day, then drop to 55°F (13°C). When fermentation is complete and the gravity has been stable for at least 3 days, crash to 32°F (0°C) and lager for 4 weeks, then rack, package, and carbonate.
BREWER’S NOTES
Mash pH: We adjust using a homegrown lactic culture, but you can use food-grade lactic acid and/or brewing salts to keep runoff below 5.6, targeting 5.1–5.2 in the kettle.
Water profile: Our chloride-to-sulfate ratio for this beer is 3:1.
HBC 1134: This is an experimental hop, not yet available on the market. However, its typical alpha acids and floral-spicy-lemon character are not unlike Aramis—or substitute another new hop you want to try. |
