Notes: Graham Crackers in the mash
Vanilla (split and scraped and soaked in vodka at least 1 week), Strawberry and rhubarb in the secondary
Cinnamon extract and any additional vanilla extract at kegging to taste. The numbers listed arent exact i just did it till it tasted good.
Puree and pasteurize the strawberries
bake rhubarb with a sprinkle of brown sugar to soften and almost caramelize and then puree and pasteurize
NOTE: I did half the strawberries at high krausen but this could over attenuate and cause a dry finish otherwise wait till primary is done before adding all the strawberries and rhubarb. |

Notes: -Water Chemistry figures were suggested by a profile BF offers for a light and hoppy beer, and produced by inputting the mineral figures on the bottle plus 1 TBS epsom salt and 2 TBS Gypsum.
- Mistake. I forgot to put in half of the pale malt and had a temp of 69-70 and watery mash for 15-20 minutes as I waited for it to cool. I then saw mistake, added rest of malt and had mash temperature of 64. Mashed for 60 min from there. GOOD NEWS. At end of mash, temp was 64-65c, so seems okay.
- 60 percent bright tablet
- Mistake. Sparge water was only 65c, so without thinking I dumped 1.5 litres hot TAP water into sparge, so no longer 1--% spring water.
- Preboil gravity 1045. Start vol is 37 ltrs. Need to boil of 4 litres to have 33 litres and target OG of 1050.
- Hopstand- didn't bother cooling, just wanted a few minutes, chucked hops in, stirred and left for 30 minutes with no further stiring.
- OG 1050, 67% efficiency.
- Poured wert through large mashing bag and into fermentor to catch trub and this worked well.
- bottled on day 6. 145 gr sugar for 25.5 litres at 16c to produce 2.4 co2
- fg 1011. 5.1 abv. Hoppy . bitter and the residual sweetness I have been looking for. very promising at tasting. Good clarity as well. Liberty bell rocks. |

Notes: Mix the flaked oats and flaked wheat with 1 lb of lager malt and mash in for 15 minutes at 150° F (65.5° C), then raise to a boil and maintain for 10 minutes. Have the other grains at protein rest, and raise to mash at 154° F (68° C) when you add the boiling unmalted grain to the main mash. Continue for 30-40 minutes, then mash out at 170° F (77° F), and maintain at least 165° F (74° C) during spargeing to keep the starch liquefied.
Collect enough run off to have 5 gallons of wort after a 90 minute boil. Bring the wort to a boil and add .5 oz (14 g) of Northern Brewer hops. After 60 minutes, add .25 oz (7 g) of Styrian Golding hops and .5 oz (14 g) of Northern Brewer hops. After 15 more minutes add .5 oz (14 g) of Styrian Golding hops. At the end of the boil, add the zest of 1 tangerine, 1 oz (28 g) coriander, and .5 tsp (2 g) ground star anise. Cool the wort and aerate it a proper amount then pitch your yeast. The beer will reach maturation in 2 to 4 months. |

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |
