Notes: Fant ikke den opprinnelige oppskriften, så gikk tilbake til boken (Brewing Classic styles av Zainasheff).
Litt usikker på gjæren her; jeg TROR jeg brukte US-05, Brewing... sier Danstar Nottingham, Wyeast 1028 eller WLP013. Tror nok ingen av de er veldig feil. I dag ville jeg nok ikke brukt US-05: denne vil gjøre ølen tørrere enn man kanskje ønsker. De andre gjærene vil gi seg rundt 1.025, mens US-05 kan ta den godt under 1.020.
Det som skiller denne ølen fra andre er bruken av treacle (lagt inn som molasses). Den trenger du for å få rette smaken på denne ølen. Ikke bruk ekstreme mengder: jeg har lagt inn 450g, det er litt i overkant men det funker.
Sist men ikke minst: la denne ølen få modne lenge. Gjerne på flaske. Og lykke til!

First brew on new temp controlled electric setup and new grain mill. Going for a lighter colored and bodied Tropicalia with a good head and mouthfeel. Using dry yeast for the first time. Using K-97 German Ale for this batch, and will make an identical second batch trying out US-05.

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |
