heat a gallon of water to dissolve the sugar completely, do not boil. Mix all ingredients in a bucket or carboy with additional water to bring to 5 gallon total volume. Add the yeast and nutrient and let ferment.
After fermentation, rack to a bottling bucket, add the sorbistat, vodka and additional sugar to sweeten to taste. Bottle and cap. This will be a still lemonade with a kick you will not believe. |

Notes: I use 1/2 oz of the El Dorado for 15 min left in the boil. Hopstand 1 oz Eldorado and 1.5 oz Mosaic at flame out. 10 min after that another hopstand with the rest of El Dorado and Mosaic. 3 days into fermentation dry hop with the Ekunot. Day 7ish kegged carbed and drinking day 10. Last time I made this was partial mash. Was really good. Loosely based on Batsquatch. Had really good haze but after a few weeks clears out but was still good. So this all grain version I upped the flaked grains and malted wheat. Going to brew this weekend. |

Notes: Before brew day, get a yeast starter going.
Mash at 152° F for 70-80 minutes. Sparge at 175° F. Conduct a 60 minute boil, following the hop additions as listed in the ingredients. Chill to 68° F and pitch yeast. Keep fermentation under 72° F.
After primary fermentation is complete, dry hop in primary for 10 days (no longer than 14 days). Due to the heavy dry hopping, cap the fermenter and cold condition for a few days before kegging, or rack to a 2nd keg after cold conditioning the first keg for 1-2 days. If bottling, you may want to use a secondary fermenter to reduce the chance of clogging the bottle filler. |

Notes: 0 min boil hop = Post Boil Swirl Hops.
Mash at 150F. Kill the flame after the 90 min boil and add the Post Boil hops, swirl, cover and let sit for 60 min. After 60 min, drop the temp quickly, pitch and ferment at 66F for 14-17 days. Cold crash to 35F before racking to secondary. Rack to secondary, let the beer warm back to pitching temperature, and dry hop. Add the corn sugar to a cup of water and boil for 5 minutes, chill and pitch when ready to bottle. Bottle at 66F. |

Notes: Brewed on 2/1, weather sunny in the 50s. Receipt with actual grain bill not available (Dean may have it?). Brew day went well but only came up with 1.5 gallons after the wort was chilled. Added .5 gallon to complete two 1-gallon carboys. OG recorded at 1.048 using a refractometer not calibrated. Two weeks in two 1-gallon carboys for primary fermentation. Absolutely the most aggressive fermentation we have encountered, blew the airlock off both carboys! After two weeks transferred to two 1gallon carboys for secondary fermentation. |
