Notes: Heat 15 qts. (14 L) of water to 165 °F (74 °C) and stir in crushed grains and flaked maize. Mash at 154 °F (68 °C) for 60 minutes. Stir boiling water into mash to boost temperature to 168 °F (76 °C) and hold for 5 minutes. Recirculate for 20 minutes then begin running off wort. Sparge with 170 °F (77 °C) water. Boil wort for 90 minutes, adding hops to boil for the times indicated in recipe. Add yeast nutrients and Irish moss with 15 minutes left in boil. Cool wort and transfer to fermenter. Aerate wort and pitch yeast. Ferment at 70 °F (21 °C). Rack to secondary when fermentation is complete. Bottle or keg a few days later, when beer falls clear.
Note: use flaked maize, not corn. Maize was in in my list on this calculator. |

Notes: Ended up with a nice malty beer. Primed with DME. Perhaps fermented at too high of temps making this beer very estery. I am slightly disappointed with the overall outcome of this beer. A little lighter than I wanted for color, if brewed again, I would prime with corn sugar, and more of it. head/retention is low, perhaps needs more time in bottles before being ready to drink.
Update: this beer has sat bottled for several months and now tastes great. The eastery profile of the yeast has mellowed and now this beer tastes the way I wanted it to. |

Notes: Allow Primary to complete. Boil Beechwood chips 30 minutes and cool to room temp. Transfer chips into secondary fermenter. Rack beer onto beechwood. Let beer sit on beechwood for 11 days. Boil oak cubes 10 minutes. Allow to cool. Place in secondary with beer/beechwood. After 3 days, transfer to bottling bucket and bottle. Allow to condition 3 - 4 weeks then transfer to fridge.
Great cream ale with a very smooth and crisp finish... |
