Notes:
BEFORE BREW DAY:
1. Steep the dark grains overnight in 2L of water in the fridge.
BREW DAY:
2. Heat 7 litres of water to 75C in induction pot. Turn off heat and add BIAB bag, with the seam on the inside.
3. Pour in HALF the pale malt and flaked oats while stirring - get rid of lumps. Add remaining half and stir for 5 mins.
4. Check temp is 65-70: preferably 68C - adjust if necessary with cold water or add heat.
5. Wrap a thick towel round the pot and leave alone for one hour. Check temp is between 65-70c and preferably 68c- after half an hour. Stir. Add heat or cold water if not.
6. After 60 mins is up, lift out grain bag and put into colander above the induction stock pot, leaving the bag to drain for a minute or 2. Squeeze bag.
7. Use another 3 litres of bottled water and pour it over the grain bag. Leave 10 mins, stir, and strain the liquid to the induction stock pot. Should have about 11 litres, which will reduce when boiled for an hour.
Dispose of grains, add all wort to pan and bring to boil. Add 15 grams of Bramling Cross hops when boiling point is reached. Boil for 60 mins total.
8. With 10 mins of boil left, sparge the dark grains with 1 L of water and add the liquor. Also add remaining Bramling Cross hops with 10 mins left of boil.
9. Cool the wort in sink, with lid on, add to sterilised FV via sterilised sieve to catch hops, and top up the level to 10 litres if necessary. Pitch 1/2 packet yeast at around 18 - 20C. Leave to ferment for 2 weeks at 18-19C.
10. Prime with 45G of sugar in a priming solution. Bottle.

Ferment for 7 days and allow to rise to 68 degrees to end of fermentation. (10-14 days)
After 4-5 days
Boil .5 oz of untoasted white oak chips, .5 oz of med oak chips, and .5 oz of heavy char chips in 8 oz of of water for 5 minutes and drain off water. Add all chips to 8 oz cheap bourbon for 7 days. Drain off the rot gut bourbon and soak the chips in 750 ml of good quality bourbon for 4-7 days. Begin tasting the bourbon after 3 days until you get a vanilla, chocolate, and coconut flavor that is smooth.. Blend the liquid (not the chips) into your keg to taste. Add 2 oz of chocolate extract as well as a spice. Final gravity should be around 10-11 % after the addition of liquid sweetness.

Put 2.5 lb pureed rasperries. not strained, into boil at end with 15 minutes left.
Puree 5lb frozen fruit chunks, strain and heat at ~170 F for 5-10 min prior to adding to fermenter. This will denature the papain enzyme that can digest proteins and ruin head retention.
*Fruit is all raspberry.
Add first round dry hops at high krausen, next batch few days later for few days with raspberries and fruit.
Increase chloride levels in water with gypsum.

Notes: This is a single infusion mash. Mix the crushed malt and flaked maize with 3.6 gallons (13.6 L) of water to stabilize the mash at 151 °F (66 °C) and hold for at least 60 minutes. Sparge with 3.6 gallons (13.6 L) of 170 °F (77 °C) water adjusted to pH 5.7–6.5.
Collect 5.4 gallons (20.4 L) of wort, top up with water to 6 gallons (23 L) and conduct a 60-minute boil. Add hops per the schedule on the ingredients list. At the end of the boil, you should have 5 gallons (19 L) in your kettle.
After the boil, give your wort a stir to create a whirlpool, then let the wort settle for 30 minutes prior to chilling. Cool the wort to 50–55 °F (10–13 °C) for fermenting, aerate well and pitch your yeast. Maintain fermentation temperature between 50–55 °F (10–13 °C). After seven days, rack to secondary fermenter. When fermentation is complete and beer has cleared, bottle or keg as usual. |

Notes: Fermentation:
Start fermentation at 20C for 2 days. Raise temp to 25C. Primary 1 week, secondary 1 week. Made a robust starter with DME. This yeast is low flocculating in the starter, but a beast in the wort. There was a good inch of trub and a very thick krausen that acted like meringue. Definitely collected a generous sample for reuse. Force carbed at 20 psi over 2 weeks.
Tasting notes:
Tropical fruits on the nose and very mild spice in the middle of the tongue. Very warming, but no bite from the alcohol. The yeast imparts a sweet, bready flavour with a very mild toasty character. No hops or tannin astringency.
Recommendations:
Would make an excellent holiday ale with the addition of more spice, particularly clove, cinnamon and cardamom. Could up the bittering hops to suit your taste. Since the alcohol isn't on the tongue, watch out! |
