Notes: Reusing yeast from a previous brew.
Add pumpkin purée to mash with grains.
Mash 90 minutes at 153F.
Boil 75 minutes, add pumpkin pie spice and maple syrup at flameout with remaining hops.
Ferment at 51. Add vanilla beans for lagering.
Plan to lager for about 11 weeks to have ready for season.
Honestly, I plan to only add 1 vanilla bean for lagering. 3 beans for 11 weeks seems like too much vanilla. |

Notes: Vanilla bean split, scraped, all soaked in vodka 3 days. Add bean & liquid to secondary for final 7-14 days.
Whole coffee beans soaked in vodka 3 days. Add beans and liquid to secondary for final 3-7 days.
Depending on desired intensity of vanilla/coffee blend, add with discretion. Give the vanilla bean a head start in secondary. For more white chocolate notes, add vanilla beans early and coffee beans late (e.g. secondary times of 12 day vanilla & 3 day coffee). For more coffee notes, increase its secondary time (e.g. secondary times of 12 day vanilla & 5-6 day coffee). Be mindful of sanitation and sample on day 3 or 4 after coffee bean addition and every 1-2 days after. Coffee notes will get stronger during secondary time, so bottle when you like the flavor profile. |

Notes: This is my second time doing this recipe, a slightly revised version at least.
I plan on adding 1lb. honey with 3/4 oz of steeped sage to one 5 gallon fermentor at racking, and dry hopping the other fermentor with 1 oz of galaxy after active fermentation in about 6 days for about 6 days.

| Notes: Final volume to fermenter was higher than planned but so was efficiency. Mash stayed around 152 for most opf the 60+ minute mash. The following 20 minute recirculate/mashout step really helps efficiency. What went into the fermenter smelled and tasted great, can't wait for the yeast to go to work. I'm curious if this porter may not be very "roasty" and if I may consider using roaster barley next time. |
