| Notes: This is an All Grain HopSlam clone I've edited from an earlier version (MB Hopslam). The malt in that version was spot on. However the Hop was way too weak. I am increasing the Hops on this one by 50% and shortening the Dry Hop time to 1 week. Last time with the same Grain amount I hit an OG of 1.11 (not a typo). |

Notes: **1/2/2020- I stopped fermentation with 8g of a sorbate/sulfite mix from a wine kit and added 1qt of Pear Juice in to back sweeten. Then cold-crashed and kegged and after 4 months it is amazing! I bottled the whole keg in order to make room in the keezer, and also because it's not an everyday drinker.
12/19/2019- Made this with 1.75G of Apple Juice and 3G of Pear. Unfiltered, unpasteurized. Ascorbic Acid in juice, but shouldn't be a problem. It was poured onto a WL-007 Dry English Ale yeast cake. Fermentation started in about 1-2 hours. NOTE: The sugar is not really added to the recipe, the OG here was lower than my measurements. |

| Notes: Primed with Dry Malt Extract, and what a great creamy, coffee, chocolate flavored beer. Its delicious. The Wyeast packs are perfect size for 3 gallon batches without needing a starter. The yeast did great work on this beer in 65 degree temps. 2 weeks primary, 2 weeks secondary. Tried the first one within a week, slightly undercarbonated, but still delicious. DME seems to take a little longer to carb up than regular corn sugar. Knocked this brew out of the park. Hope there is some left for St. Paddy's day. |
