Intended to be a reconstruction of an 1800 London Porter, this beer was brewed with the intention of purposely infecting part of the batch with a Brett Strain. (The current plan is to take 1 Gallon from part of the batch. Infect it and then blend it into the rest of a 5 gallon set. Once the proper taste is acheived we'll try and slow/stop the Brett by freezing the beer.)
MASH NOTE - Black Patent was used only during the sparge for color boost.
PROBLEMS - Okay, so you can tell from the recipe above that the Malt Bill does not contain any high powered enzyme laden malts. This bit us in the butt and required us to use a whole 4 oz jar of Amalyze Extract to convert the mash (which ended up running 2.8 hours). Next time I'm thinking of substituting the Marris with Domestic 6-row for the extra oomph. And possibly moving away from the pre-roasted brown malts and roasting our own. |

| Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 66F. When fermentation slows, rack to purged keg on top of bagged (and weighted, you want them submerged but not interfering with dip tube) whole hops and let fermentation finish at 64F for 5 days under a little pressure. Drop to 38F or so and force carb. Carb to 2.0vol and enjoy fresh! |

Mesking på 69 grader i 75 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.

En wee heavy er et kledelig utgangspunkt for eksperimentering med innkoking av vørter for å fremme maillard-reaksjoner og skape et dypere maltpreg. | Notes: I've brewed this several times with good results. Pay attention to fermentation temps ... cooler temps bring out more of the spice flavor and warmer temps bring out more of the banana flavor. One of my favorite Hefeweizen beers is Tabernash Weiss which is on the spicy side, so I ferment at cooler temps. |
