Notes: brew day yield was actually ~4.5+ gallons, OG was 1.092, no DME was used because OG was close enough.
Mash target says 152, though that was just because I think this site doesn't take into account some minimal thermal loss. The mash actually hit 150, which is what I wanted anyway. Had to add a liter or so of ~165F water at about 30 minutes to bring up from 148 back to 150F. |

Notes: One day prior:
Yeast Starter w/1000ml water. Boil with 1 cup light DME and 1/4t yeast nutrient. Cool. Add yeast packet (1056).
Make spruce tea with cold water. Boil 2qts water. Cool. Steep spruce tips in water overnight.
Mash at 150 deg for 60 min.
Sparge slowly with 170 deg water
Boil 60 min with hop additions.
At zero time, turn off heat and add spruce tips. Stir to create a whirlpool. Let stand 20 min.
Chill to yeast temp, 68 deg. |

Notes: Big juicy IPA. Keep the base beer and play with the dry hops for different versions. This is about a 95% (with the citra/mosaic dry hop) clone of Station 26's Juicy Banger.
Versions 1-3: bounced between too bitter, too malty, and too boring...
Version 4: almost there, needs more bitterness
Version 5: dialed in bitterness, flavor, and dry-hops [apollo] (centennial) {citra/mosaic}
Version 6: tried Simcoe/Azacca/CTZ in the dry hop (too bitter!)
Version 7: repeat #5, bumped up DH to 12g/L
