Notes: This was a roller coaster ride! Wort boiled with 4 litres of water, plus a litre of Sparge runnings. Cooled down to below 79 C with cooled water and cooled in a bath for 30 minutes. Liquored back with 2 Litres of bottled water from the fridge to OG 1.064. Yeast pitched at 18C. Kept at 18C for three days then allowed to free rise. Ambient temps were up-to 30C over a five day period. Put back in the 18C cooler as I was scared of fusel production at these temps. One more week at 18C. Half way through the week gravity reading revealed 1.000! Crazy! Supposedly 99% attenuation! At bottling at the end of 2 weeks since pitching FG was 1.000. No change, so 8.43% alcohol.
1 week after bottling tasting revealed a creamy head with silky mouthfeel. Due to oats, I guess. No fusel taste but great citrusy ethers. Really can't tell that it was fermenting at 30C for a while! Very tasty and clean. Not clear, but that is due to the oats.
Successful and will get better with age, if I can avoid drinking all of my tiny batch... |

Notes: Cold steeped the dark grains in 2.5 quarts of water for 48 hours and added the liquid post boil. They did not add to the gravity. 6.45 oz roast barley, 4.8 oz chocolate malt, 6.2 oz de-husked carafa 2, 4.35 oz pale chocolate. |

Notes: Steep grain in 3.5lts water at 68 degrees C for 30 mins (remove bag), add 4.5lts of water bring to boil add 1 tub of munton's light malt extract (1.8kg) and boil until foam starts to settle about 15 mins. Start the 60 min boil after this, @60 min add 10g pacific jade, @ 30 mins add 10g citra, 10g zythos,(also add 1 teaspoon of Irish moss at 30 mins)(start to rehydrate yeast at 20 mins) @ 5 mins add 10g zythos and 10g citra, @flame out add 10g zythos and 10g citra. Cool wort in sink of cold/iced water until it is under 25 degrees then add to fermenter (which already has 13lts of boiled and cooled water in it) through a sterile sieve. Top up to 9L with cooled sterile water. Put lid on aerate the wort for 5 mins, pitch yeast add airlock. After 5 days increased temp to 21 degrees (only if the airlock has slowed down), then after another 48 hours dry hopped with 10g of cascade, 30g citra, 20 zythos. |

Notes: Mash all Grains at 152 Degrees for 60 minutes.
Sparge grain and collect 4 Gallons of Wort.
At start of Boil add all Sugar(s) and first Hop addition.
At 10 minutes add second Hop addition along with Irish Moss and Yeast Nutrient.
At Flameout add last Hop addition and place in Ice Bath to cool to 70 degrees.
Aerate and pitch yeast. Ferment one week at FC 65 degrees,(Fermenting Wort at 70 degrees?) and then raise temp to 71 degrees to finish fermentation (2 weeks).
Bottle Condition for 3-4 weeks at ambient temp.
Actual OG: 1.077
Actual FG: 1.007
Placed in FC set @ 70 degrees. Wort Temp @ 71 degrees. 11:30am 9-7-15
Will drop FC temp to 65 degrees when activity starts.
This beer finished MUCH lower than I thought it would and finished at 9%+ |

Had to boil an additional 20 minutes as the pre boil gravity was low at 1.035. still put 11 gallons in the fermentors so the volume must have been more than expected.
