Didnt take notes on the yeast but I'm 98% sure it was not wy Bavarian lager but instead 34/70 yeast cake reused from a previous batch of festbier or something. Adjusting recipe now. Previously recipe said 1015 FG with 90% attenuation but I'm not sure if that is measured or predicted.

Smh I didnt check my volume plan. Started with 12 gallons and boiled down to 10. Shouldve collected more and ended at like 11. Was only like 8 gallons in fermenters, topped with water to even 10 before taking gravity measurements. For mash, 154 strike water equaled 150 mash just like on 5 gallons.

scaled up to 10 gallons. will be second 10 gal batch. not sure on the pre / post / fermenter volumes. adding some acid malt for ph and a little caramunich to add some more color and possibly taste. thinking about decoction mash for this one.

Listening to homebrewhappyhour episode with Rob from Pixel Perfect Brewing, he highlights a couple things that he says helped his octoberfest. fermenting under pressure, and decoction mash. he actually did the decoction on an extract brew with specialty grains. also he did 6 weeks conditioning.
this brew i thought was really good as is, and it was indeed a gold medal winner. but possibly adding these three techniques could make it even better. push it to BOS status.
also, judges said it was low carbonation and needs more head retention. touche.

altered from Drew's March Beer from sept 2019 byo. i changed the hops to get rid of first wort hop addition and to use a single hop, in even oz amount. confirmed recipe uses 1.5 qt/lb mash. the MUNICH/OKTOBERFEST YEASTS REQUIRE DIACETYL REST. if wyeast 2308 yeast not available, check for WLP820 oktoberfest/marzen. Or for simpler wyeast 2124 bohemian lager, WLP833 german bock, Wyeast 2206 Bavarian lager (i might have some of this from last year?)
for diacetyl rest, copied from virginia lager recipe :
going to do byo fast ferment approach janFeb2017. reread but start at 44-50 let fermentation go 50% then (remove the probe from the fermentor let it reach ambient temp then...?) raise temp 5 degrees every 12 hours til you get to 65-68. once you get 100% you can crank down to lager temp for 3-5 days then you done. this will take care of diacetyl rest and apparently gets the lager completely done in 2-3 weeks. |

Notes: Overall Impression:
A flavorful, yet refreshing, session beer. Some examples can be more malt balanced, but this should not override the overall bitter impression. Drinkability is a critical component of the style.
Aroma:
Low to moderate malt aroma, often (but not always) with a low to medium-low caramel quality. Bready, biscuit, or lightly toasty malt complexity is common. Mild to moderate fruitiness. Hop aroma can range from moderate to none, typically with a floral, earthy, resiny, and/or fruity character. Generally, no diacetyl, although very low levels are allowed.
Appearance:
Pale amber to medium copper color. Good to brilliant clarity. Low to moderate white to off-white head. May have very little head due to low carbonation.
Flavor:
Medium to moderately high bitterness. Moderately low to moderately high fruity esters. Moderate to low hop flavor, typically with an earthy, resiny, fruity, and/or floral character. Low to medium maltiness with a dry finish. The malt profile is typically bready, biscuity, or lightly toasty. Low to moderate caramel or toffee flavors are optional. Balance is often decidedly bitter, although the bitterness should not completely overpower the malt flavor, esters and hop flavor. Generally, no diacetyl, although very low levels are allowed.
Mouthfeel:
Medium-light to medium body. Low carbonation, although bottled examples can have moderate carbonation.
Comments:
More evident malt flavor than in an ordinary bitter, this is a stronger, session-strength ale.
History:
The family of British bitters grew out of English pale ales as a draught product in the late 1800s. The use of crystal malts in bitters became more widespread after WWI. Traditionally served very fresh under no pressure (gravity or hand pump only) at cellar temperatures (i.e., “real ale”). Most bottled or kegged versions of UK-produced bitters are often higher-alcohol and more highly carbonated versions of cask products produced for export, and have a different character and balance than their draught counterparts in Britain (often being sweeter and less hoppy than the cask versions). These guidelines reflect the “real ale” version of the style, not the export formulations of commercial products.
Characteristic Ingredients:
Pale ale, amber, and/or crystal malts. May use a touch of dark malt for color adjustment. May use sugar adjuncts, corn or wheat. English finishing hops are most traditional, but any hops are fair game; if American hops are used, a light touch is required. Characterful British yeast.
Style Comparison:
More alcohol than an ordinary bitter, and often using higher-quality ingredients. Less alcohol than a strong bitter. More caramel or base malt character and color than a British Golden Ale. Emphasis is on the bittering hop addition as opposed to the aggressive middle and late hopping seen in American ales.

Notes: Mix in gypsum with mash. Be sure to stir the shit out of the mash to incorporate the rice hulls to prevent a stuck sparge. After primary fermentation is complete, mix quick oats with 1 tsp cinnamon and toast oats on a baking sheet for 30 mins at 300 degrees, stirring every 10 minutes. Add to a sanitized hops sack and transfer with the brew into secondary. Rack to keg after 7 days and carbonate to 2 volumes |
