The flameout hops got whirlpooled for 10 minutes before cooling down. Lastly, pitched the packet of US-05 directly into the wort and aerated it, even though I've read not to. Next time I will use two packets. Even though it fully fermented, it never carbonated all that well because of a lack of yeast. A good double IPA. My rating: 8 out of 10. Note: USE A BLOWOFF TUBE! THIS THING IS AN ATOM BOMB. ;)

After 3 days a hop tea of 1oz Saaz and 1 oz EKG boiled in 2 cup of water for 10 minutes was then added for a small amount of hop flavor (we wanted the lacto to work for the first 3 days). The fermenter was kept at 79-81 for 10 days after reaching the 80° mark and 5 gallons was kegged (leaving just hop matter, yeast and some juniper berries in the bottom along with a couple inches of cloudy beer. 4 oz of gin was added to the keg. This gin had been soaking for 2 weeks in an 8oz mason jar with a a few wine barrel stave chunks. This did not drastically change the flavor of 5 gallons of the beer but did add a small amount of gin/juniper flavor and overall complexity.

He gave me a bunch of Cascade hops so I thought I would try and make a Pale Ale using just those hops. Brew day Notes: -Steeped Grains at 155* for 45 minutes -Added enough water to the wort (after boil) to get to 2.75 gallons. Shook very well in 5 gallon carboy and poured wort into 3, 1 gallon glass carboys. Split 1 package of Safale US-05 into 3 piles and poured one into each carboy. 10 Days after brew day: -Dry hopped with .75 oz of Cascade whole leaf hops. Added .25oz of Cascade whole leaf hops to each (3 total) 1 gallon glass carboys.
