Notes: 1. In your kettle, heat 3 gallons of water to 155 F
2. Carefully add your Dry Malt Extract (DME), stirring to avoid clumps
3. Bring your wort (malt liquid) to a boil
4. When the wort is at full boil, start a 60 minute timer and add 2oz Tettnang hops to the boil
5. After 60 minutes, turn off heat and cool (in sink or otherwise)
6. Pour 2.5 gallons cold water into your fermentation vessel, add hot wort and cool until about 70 F
7. Use your hydrometer to find your original gravity and record
8. Pitch your yeast and place airlock (and lid) on your fermentation vessel.
9. When signs of fermentation cease, after at least 14 days, rack your beer into your bottling bucket.
10. Add 5 oz priming sugar to 1 cup water and bring to a simmer. Allow to cool some, then add to bottling bucket. Stir gently with sanitized bottling wand.
11. Fill bottles and cap.
12. Store bottles at room temperature for 14 days.
13. Refrigerate overnight
14. Enjoy!!! |

9-22-2012 moved to Keg. Chilled to 40 degrees and put 30lbs CO2 shook for 45 minutes. Tested carbonation but not sufficient. Put in fridge with 40lbs CO2 and left for 24 hours. Carbonation was perfect. End of beer was week in alc. believe I should have left on primary and also secondary longer. |

Two weeks before bottling start the infusion of Pablano, chipotle, and Jalapeno peppers, without seeds, in about 5 oz of cheap vodka.
After two weeks strain the infusion through coffee filters to remove the trub.
Add the infusion to the bottling bucket along with the sugar before bottling.
Transfer to secondary after one week or ten days then after a week in secondary cold crash the beer for two weeks.
Before bottling add 1/2 pack of us-05 to the bottling bucket to ensure carbonation. |

Notes: Start with 2.5g water.
Put steeping grains into a muslin bag, tie it off, and put in the water as it heats up.
Steep grains until 165F, then after you reach 170F or above, dunk grain bag and let it drain into kettle. Discard grains.
Heat to 190F, remove from heat, and add Light and Munich LME.
Heat to boiling, and follow hops schedule.
At 15 minutes, add Dark DME and return to boiling.
Whirlfloc is optional...but I use it in about every brew I make except stouts. |

Notes: My variation on a single hop sessional summer beer.
After dry hop of 3 days yield is actually 4.5 gallons - left some in the pot with the trub and more in the secondary with the hops. |

Notes: I've been wanting to make a porter or stout with some wheat malt for extra body. As I have some leftover wheat extract, I may just give this a try.
Sort of like Palmer's Mill Run Stout but with more RB.
Option: leave out C60 and/or Light extract. |
