It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.

Notes: Extra light DME
Steep grains at around 160°F for 40 minutes.
Add all 6 lbs of DME.
Add Cascade hops and boil for 60 min.
Add Saaz hops @ 40 minute mark of the boil (add to boil for 20 minutes)
Add 4oz of lactose at 45 minute mark (add to boil for 15 minutes)
Add 1 tsp of Irish Moss at the 50 minute mark (add to boil for 10 minutes)
Add Tettnang hops at flameout.
Cool to room temperature, add 2oz of pure vanilla extract. Aerate (shake) the wort, and pitch the yeast. |

Notes: Everything in this recipe is really cut and dry..besides all of the Cocoa and Cacao Chocolate baking bars..With ten minutes to go I took about .5 gallons out of the wort and placed it in a small pot. I added the Hershey's and Ghirardelli chocolate to the wort. After it was all melted I slowly poured it back into the wort. |

Notes: 2 packets of Wyeast for 1L starter. Stir plate, step-up, decant and rebuild as necessary.
Steep grains in 155°F water for 30 minutes.
Turn off heat and bob grains for 10 minutes.
Bring to boil for 60 minutes adding fermentables, hops and other ingredients per schedule.
Carmelized white cane sugar - place sugar in a sauce pan over medium heat. Stir constantly until it turns to a thick liquid and becomes a medium amber color. Add to boiling wort (@ 2 minutes) immediately before it hardens.
Vanilla beans - should be split and deseeded, placed in the wort at flame-out and allowed to rest in the wort for 20 minutes. Then remove vanilla beans and add top off water.
Transfer to secondary and allow the beer to condition for one week. Bottle and then allow the beer to carbonate and age for two weeks. |

Notes: Clean pumpkin and cut into small cubes. Bake for 45 mins. at 350F then mash and coat with honey. Bake for another 45 mins. at 350F. Let cool to 154F then add to steeping grains in a grain bag. Steep steeping grains and pumpkin at 150-160F for 30 mins. Remove steeping grain bag and rinse with 1 qt. of 160F water. Add extract and boil. Add hops/sugar/spice at times indicated. Cool and rack into primary. Ferment in primary for 1 week. Rack into secondary and add additional ingredients. Ferment in secondary for 1 week. Bottle and age for 2 weeks.
For vanilla vodka solution, add 2 vanilla beans to 4oz of vodka. Let sit for 2 weeks. |

Notes: I used two different dry malt extracts. One was a 1 lb bag of Breiss Golden Light DME. The other was a 3 lb bag of CBW Golden Light DME. I added all 4 lbs to the beginning of the boil (careful of overboil) but I have also heard of 1/2 in the beginning, 1/2 at the end. I used LME at the end instead.
Important to add LME with about 15 mins left in boil. This will avoid over-scorching which is known to give a metallic taste to the beer.
Add pureed apples (use a muslin bag) with about 10 mins left in the boil. You will not taste the apple in the brew, but the pectin in the apple adds a nice body and haze to the beer.
Add lactose sugar with 10 mins left in boil.
Freeze Strawberries and whole vanilla bean (use however much you want). When it is time to add these at day 7 of the secondary fermentation, they will be easy to crush.
I like the smell of the galaxy, cascade, and simcoe hops the best, which is why I chose to use them for the dry hop. Since most of what we taste comes from what we smell, it is important to use your favorite hops towards the end of your boil and for the dry hop. Dry hopping will increase aroma and get rid of bitterness.

Notes: Add 2 tsp of Gypsum to water, based off starting with DC water.
The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.
The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.
Other than that, it is a straight forward extract batch.
To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it). |

Step by Step:
Steep the crushed grain in 2 gallons (7.6 L) of water at 155 ºF (68 ºC) for 30 minutes. Remove grains from the wort and rinse with 2 quarts (1.8 L) of hot water. Add the liquid and dried malt extracts and bring to a boil. Add the hops and Irish moss as per the schedule. Add the Sumatran coffee and two chocolate varieties at the end of the boil. Add the wort to 2 gallons (7.6 L) of cold water in a sanitized fermenter and top off with cold water up to 5 gallons (19 L). Cool the wort to 75 ºF (24 ºC). Pitch the yeast and aerate the wort heavily. Allow the beer to cool to 68 ºF (20 ºC). Hold at that temperature until fermentation is complete. Transfer to a carboy, avoiding any splashing. Add the Kona coffee and condition for one week, then bottle or keg. Carbonate and age for two weeks.
All-grain option:
This is a single step infusion mash. Replace the malt extracts with 13.2 lbs. (6 kg) 2-row pale malt. Mix the crushed grains with 3.75 gallons (14 L) of 172 °F (78° C) water to stabilize at 155 ºF (68º C) for 60 minutes. Sparge slowly with 175 ºF (79º C) water. Collect approximately 6 gallons (23 L) of wort runoff to boil for 60 minutes. Reduce the 60 minute hop addition to 1 oz. (28 g) and the 30 minute addition to 0.4 oz. (11 g) to allow for the higher utilization factor of a full wort boil. Follow the remainder of the extract with grain recipe. |
