Notes: This is an attempted clone of Whistler Brewing Companies Bear Paw Honey Lager my brother had when he was up there. Based on what he said, this recipe gets the color and clarity exactly and the flavor is pretty close.
My OG ended up being 1.049 after adding the honey during the boil and the extra .75 pound in the fermenter should raise it by a few points.
I added the honey straight onto the krausen during day 6 of fermentation and let it ride for 5 more after that.
Used 2 tbsp of biofine in the keg. |

Notes: So this is the 5th incarnation of this recipe, I have yet to brew this myself. The big difference between this and the last batch is the increase in wheat malt (from 850gm to 2kg) and the respective decrease in pilsner malt (from 3.5 to 2.4kg).
I have also made other variations using Willamette hops as the bittering addition and this will be the first %100 tettnang edition - which makes it a style match.

| Notes: I would recommend this yeast because it leaves a bit of residual malt behind. Extract can tend to leave a bit of residual sugar behind (sometimes too much) which is why I subbed in some corn sugar, if you use it put it in a 10min. If you don't want to use it the beer will end up around 6% with an estimated OG of 1.060. It's really up to you. I would recommend using 2 vials of yeast for this brew because the OG is a bit higher. If you don't want it spicy hop flavor sub out the Willamette addition for cascade. You could also use centennial instead of cascade. Let me know if you want to dry hop but I would do it with a couple ounces of cascade or centennial. I looked at the rise up red and it said it's pretty much all cascade and centennial. If the AA% is way off let me know and I can update it and send you a correction. If you can keep fermentation temps below 70F that would be ideal too, especially if it has been hot in the "Hood". Notes: $27 half.
Recipe adjusted for bottling i.e. OG left 5 points below required to allow for extra provided by bottling sugar. Same applies to ABV - adjusted for extra 0.5% at bottling.
Briess Golden Light or Amber (if amber no need for crystal grains) - (if crystal needed add 75gms of 60 Lovibond) .
Liquid malt dissolved in fermenter with 1 litre of boiling water.
0 minutes hops added in portions every 5 minutes and 5 degrees of total 20-25 minute hopstand starting at 90c. Ice may be needed to reduce temp by 5 degrees at each stage of hop additions - last addition at 70c.
Increased 0 minute addition due to Throwback IPA recipe tasting quite light in hop flavor - add largest portions at 80c, 75c and 70c to add flavor and avoid actual increase in IBUs.
Yeast also changed to US-05 as Notty seemed to strip hop flavor from Throwback recipe.
In fermenter 10 Jan. OG check showed it low at 1034 but may have been poorly mixed wort. 1015 on 14th. Dry hopped 14th.
OG checked 4 days apart and staying at 1015 - equates to very poor attenuation from S-05 (65%)- expect my calcs were wrong somewhere or PPG for malto is too low.
