Notes: Single Infusion: Mash at 148°F for 60 minutes. OR
Decoction: Mash in at 143°F and hold 5 min. Raise to 147°F and hold 30 min, remove ⅓ of the mash, bring it to a boil for ten
minutes, while stirring, being careful not to scorch any grain, then add it back to the main mash. Raise to 155°F and hold 5 min. Mash at 162°F and hold 20 min.
Knockout at 75°F, ferment at 78°F until beer reaches terminal gravity. Allow at least 24 hours for the beer to rest at terminal
gravity before cold crashing to 35°F.
Carbonate in the bottle at 3.8 vol. |

Brewed on 12 JULY 2020, specific gravity higher than expected, so adjusted efficiency to yield the actual specific gravity of boiled wort.
Also used three yeast packets due to high starting specific gravity. Fermentation more vigorous than expected, still going strong on 16JULY2020.
Diluted with 1 gal. sterile R.O. water on 17JUL2020 in primary.
Secondary fermentor on 28JUL2020. Sp.Gr. = 1.006. Hydrometer. Transfer to keg on 06AUG2020, sp.gr. = 1.0076 corrected refractometer, 11.5 psi CO2 @ 38 F. Estimated ABV = 7.3% |

Commercially brewed version won People's Choice at the tapping at Scratch Bar. That version used Mosaic and Citra instead of Enigma.
Was a fruity hazy DIPA. Enough bitterness to back things up and not be confused with a Double NEIPA. |
