Notes: Mash base malt + 1 lb each flaked oats and wheat (13 lbs) x 45 min, then add remaining flaked adjuncts (3 lbs) x 45 min (90 min mash)
Full volume, no sparge.
No boil.
Raise to 180F after mash out. Add DME and stir in.
Whirlpool with spoon. Then add hops and whirlpool x 30 min. Add chiller after 10 min and sit in hot wort x 20 min. After 20 min, turn off heat and allow temp fall x 10 min.
Then chill to 66F prior to transfer to FV. Oxygenate and yeast pitch.
Ferment at 68F
At end of fermentation, add hops in bags (with 0.16 g potassium metabisulfite) x 3 days. Then remove hop bag and D rest x 3ays.
Once SG is stable, cold crash x 5 days and then keg. No gelatin or biofine. |

Notes: Whirlpool hopping voor 20 minuten bij 75 graden. Daarna direct verder afkoelen tot 20 graden.
Dryhopping in drie stappen: start met de eerste stap als de fermentatie nog niet helemaal klaar is. Na drie dagen de hopzak verwijderen en de hopzak voor stap 2 toevoegen. Die weer na drie dagen verwijderen en de hopzak voor stap 3 toevoegen. Ook die na drie dagen verwijderen.

Notes: Mash for 40 minutes at 154°F (68°C), then for 10 minutes at 162°F (72°C). Mash out at 171°F (77°C).
Boil for 60 minutes following the hops and additions schedule.
*For the lactose, reduce the heat and stir in the lactose. Then, bring back to a boil for the remaining 10 minutes.
After the boil, chill the wort to slightly below fermentation temperature, about 64°F (18°C). Aerate the wort and pitch the yeast.
Ferment at 66°F (19°C)
Dry-Hop:
First dry hop addition is at 30% attenuation (about 1.052).
Second dry hop addition is at about 1.029.
Divide the dry hop total weight evenly between the two additions. |
